Soft Ganache Cookies

- I made ganache cookies, which are popular in Korea.
The cookies are crispy and delicious when eaten cold, but the recommended way to eat them is to warm them up in 500w for 10 seconds!
The ganache melts as it warms up a bit, and the cookies soften and have a rich country-ma'am-like texture that is very delicious.
If you overcook the cookies, they will fall apart when you hollow them out in the middle.
I baked them just enough to leave them soft, and then placed them on a baking sheet and let them cook through in the residual heat, and they turned out just fine.
▷Ingredients (for 7 cookies)
30 g sweet chocolate
50 g unsalted butter
50 g sugar
1 whole egg
140 g cake flour
20 g ground almond
10 g cocoa powder
5 g baking powder
1 g salt
1-2 tbsp powdered sugar
60 g sweet chocolate
50 ml heavy cream
Dried raspberries
▷How to make
1. Melt 30 g sweet chocolate in a saucepan of simmering water.
2. Beat in unsalted butter, sugar, and whole eggs, in that order.
3. Sift in cake flour, ground almond, cocoa powder, baking powder, and salt, and mix until powdery.
4. Divide the cookie dough into 7 equal portions, each weighing 50g.
5. Sprinkle with powdered sugar if desired.
6. Bake in a preheated oven at 170℃ for 10 to 13 minutes. Immediately after baking, gently mash the center of the cookies with a rolling pin.
7. Allow to cool on a hot baking sheet.
8. Melt 60 g of sweet chocolate in a pan of simmering water.
9. Add cream and mix until glossy.
10. Place the ganache in the center of the cooled cookie and decorate with dried raspberries.

A great cookie recipe that could easily have the chocolate removed and add some Christmas candied fruit or cherries added. Always great to have a base cookie recipe that one can customize.

失敗してしまいました。以下何かの参考になれば
現象
①焼き上がりが平べったい
②凹ました時に生地が割れる
反省
①焼く前に強く潰しすぎた。ボール状に成形する際に叩くようにしてしまった(極端に言えばハンバーグみたいに)
②焼きすぎ?170℃13分で焼いてフニャリとしていたので、加熱不足かと思い追加で5分強焼いた→弾力性が無くなった?
あと焼く前にまぶすなら粉糖はやはり溶けないタイプのでしょうか。普通のでやったらやはりというか消えました笑
追記
卵は常温でやったほうがいいのかな?冷蔵庫から出したやつでやったせいか、粉類入れる前の生地がダマっぽくなってしまった(軽く湯煎したら良くなった)
