This imperious attitude is exactly what contributes to mediocre levels of knowledge and expertise , two factors that continue to stifle creative and innovative approaches to teaching effective tennis skills.
The reason the racket head drops below the hand is because they are swinging from a fairly low position. You can test this by pointing your arm at the varous start heights and with the wrist cocked back see how far down your wrist bends - the lower the arm the more you can get the hand pointing downwards. In addition the lower you start the more upward momentum your arm will have as it moves up to the ball. This momentum gets transfered to cause the windscreen action, so the lower you start the faster the upward part of the windscreen action, so the more topspin it generates.

The traditional teaching low to high using a bicycle tire or top spin pro is not the optimal way to swing. All the pros in this clip has a very shallow low to high swing plane/path.

It depends on when you hit the ball. If the ball is taken on the rise or at the top of the bounce not much need to go from low to high. But if the ball is falling from the top of the bounce, you need to hit low to high for topspin. The video is misleading.

FYI - there's a teaching aid that helps beginners learn the principle of swinging from low to high - in essence it demonstrates how to produce spin on a ball - the 'windshield wiper' motion relates to the follow-through after contact which is a natural progression, as long as the racquet head was below the height of the ball in the approach stage.
Most of the videos are from the front, you can't use this perspective to show whether the hand or the ball is lower. Following this logic you could say that the top of the net is actually lower than the player's feet as that what it looks like. You should use a side view videos for this analysis.

Each and every professional swing you've shown has arm moving in a vertical component - from low to high. Sometimes it will be more (esp in high angle cross-court lasso), sometimes less or almost not at all (high ball flat drive), but to say NEVER is simply false and a misleading concept to teach.

If the ball is very low, then there's a more low to high swing. If the ball is very high, then you might swing down as in high to low.
I think further proof that this is true is that you can decide to hit a flat shot or slap instead of topsin pretty late into a swing.
