- Ingredients: karela/bitter guard, ½ kg goat meat/lamb. Meat and bitter guard should be of same proportion to look. Fresh coriander, fresh 5 green chillies. 2 md tomatoes, 2 md onions, half garlic. 1ts salt, chili powder, coriander powder each, ½ ts turmeric powder and 1 ts of cumin seeds

thanks for the recepie , got married few months back , and my wife is 21 so she dont no much cooking as well , with ur recepie i tried to make today and it was really great , just liitle prob my karela was little bitter may be not properly washed , over all it taste smells and looks nice

i will, i like masala bhare karele much more. recipe is there, look at it. karele are not avaiable here i have never made them but i will ask ammi. she can make them very well.

Thank you for this recipe baji.i was about to throw out my karelas in a day or 2. I was in search for karela recipe but I didn't find any good. I even requested another chef, but it was no use. I hardly make karelas now becuz it comes out bitter wether I boil & extract the water, wash with salt, or fry it , doing this takes long. I will try this method for Iftar today and see how it come out.

Plus u have to fry the onions too after the karelas. The onions arent supposed to be floating in there half-cooked.

I really like the way you cook it but just wanted to ask that I think the quantity of the karele is too less than the meat,what if I put some more in it coz I like more karele than meat thanks

eat it with natural yogurt it wont be bitter then :) i was 18 when i got married :) first thing fried an egg, but never knew that ke oil bhi dalna hota hai. I was alone with my husband and no was there to help

add 2-3 cups of water cover and leave it on md heat till tender

peal cut, apply salt place them in micro, cook 4-5 min squeeze well and cook
make karahi chergha, Marinate at night and leave it in fridge, cook it when ready to serve, very quick

use bus khurach sa lete hain, ya cheel bhi lete hain, phir namak laga ker rakh dete hain dhoop main, us ka pani nikal aata hai to nachor lete hain, ager cheelain naheen to pani skin apne ander he rakhey gi
you have to peel the fresh karelas. Add salt to it, leave for atleast 15-30 mins. with lots of salt on it. Wash it off afterwards really well in a seive.
Asaalamualiku Baji, If you are in Brisbane, you can get fresh Karela from Inala Market or most of the Chinese Fruit shops.

once i had tried to cook them,but they were too sour to eat.

How did you prepare the gourd? Did you microwave from frozen in water. If you have fresh karela what should you do? Will frying fresh karela get rid of the bitterness?

Baji iv noticed in many of your recipes u dont use ginger. Any reason that this is not included in meat or dal dishes??
one time i tried to make fresh karele and washed it and fried it. my whole house smelled like biter bad karele. and i never tried making them again. m afraid of making them again but i love karele. would u have any tips for making fresh karele so my oil and house dont stink up like crazy. please and thank you.
Just open the windows and door...It only smells for like 1 day then it's gone:)
thankyou i made them so many times and they turned out really good. it was that first time my house stank up no one knows the reason why but when i tried making m this time i was scared but they turned out really good and i dont mind a little smell but that first time i tried making m was a horrible try cause my house smelled for days and days even if i had the windows open with a fan on on
