Corned Beef for St. Patrick’s Day ☘️

Corned Beef
2-5 lb corned beef roast (pre seasoned)
5 small Yukon gold potatoes
5 small red potatoes
A small bag of baby carrots
3 1/2 cups of water
1 tablespoon of oil
1/2 of an onion chopped
Add the oil and onions to the Crockpot
Now add the corned beef and the 3 1/2 cups water. Cover and set to low heat for 8 hours or high heat for 4 hours. I cooked on Low.
Once I had only 2 hours left, I added in the potatoes and carrots. Cover and let finish cooking. You want the internal temperature to be 145 degrees Fahrenheit.
