  • As a modern homesteader and a mom, hot cocoa around the holidays is also a must. But every time my kids would use those packets of store-bought cocoa powder I would die a little inside (have you ever read the ingredients on those things? Hydrogenated oils? No thank you! I'm looking at you Swiss Miss!).
Every time my kids would make a cup of cocoa with that stuff I knew there had to be a better alternative.
I made it my personal mission to find a homemade hot cocoa recipe that my kids would not only love, but that would actually be good for them!
If you're like me, then look no further, my friends, the following recipes are for you! I'm sharing the three ways we like to prepare homemade hot cocoa that won't take all day, including recipes for an instant cup of hot cocoa that doesn't require stirring over the stovetop, and even a fun way to make great DIY hot cocoa powder in a mason jar (they are my favorite, ya know!).

I've created my own recipe, no sugar, and, add roasted carob powder for added nutrition. I doubt children would like it, because they prefer sweet, but, adults who have reduced sugar as a health benefit, do. You are so creative, thank you for sharing your hot cocoa recipe.

@@l.b.5892 For every level Tablespoon of Organic Cocoa, add 2 1/2 Tablespoon of Dry Milk Powder (your choice of skim, whole milk). Add 1/4 Teaspoon of Roasted Carob Powder (optional, I add for additional nutrition). You can then add vanilla powder if you like, or cinnamon or even a pinch of cayenne pepper powder. I sometimes use malt powder. If you like intense chocolate then add hot water to your mix in the mug, stir and enjoy. If you prefer a smooth creamier hot chocolate, add cold milk/heavy cream to your mix in the mug (just enough to blend with chocolate mix at bottom of mug), blend well with spoon, then add hot water to top up. Enjoy. You can play around with the measurements until you find the perfect mix for you and yours.
P.S. If you must have a touch of sweetness, add just a pinch of raw cane sugar, or brown sugar with a pinch of salt for that salted caramel taste.
P.S.S. Instead of milk/heavy cream try coconut milk/coconut cream, delicious. I hope this all makes sense. lol

I like to use coconut sugar in mine to reduce glycemic index naturally! I must say, the freeze drying part seems like much more added effort, time, energy cost to run etc. Just to have to add a mix to water (rehydrate) again. You can just make up a mix and add hot water later.

I make a similar cocoa recipe but I use monk fruit sweetener instead of sugar, sometimes I'll use maple syrup but that's a very rare treat since I have to be careful about my sugar intake. I also dissolve the cocoa powder in an equal amount of coconut oil instead of water, it adds to the richness and also makes it taste just a little bit sweeter.

    FYI:
Melissa I heard about a trick that will help with your processing time with the freeze dryer.
Take your trays and place them in your deep freezer. Then pour in your liquid. Once it froze solid place it in the freeze dryer to continue your process. Have heard that several people say that this helps even with the cost of the electricity used by the freeze dryer. They have also said that it is quicker this way.
It could be an experiment for you to try and see if it does work better.

I do it for other foods but I don't have that much flat level space for liquid in the trays and cleaning spilled hot chocolate in the freezer isn't something I want to deal with. 😊

When I run out of freezer room for my fd trays, I pour my liquids into ice cube trays or silicone trays or even cupcake pans and freeze into cubes, then pile my cubes up onto my fd tray. It saves room and so much time, plus it hugely reduces the chances of spills or of fd explosions from unfrozen sweet liquids!
