The functional group changes for both acyl chlorides and acid anhydrides are the same for each respective reaction! I just wanted to make that as clear as possible in the table, and break them down separately. The main thing to take notice of is the alternative product with acyl chlorides (e.g., HCl) and what observations you would get.

why in most resources do they just keep the product as HCl and not NH4Cl for reacting with ammonia and primary amines

I focus mainly on AQA and azo dyes from the reaction of diazonium is not in the AQA specification so I wouldn't really feel confident teaching it, I hope that makese sense. Sorry :(
