The backslashes are not random, it is simply escaped JSON. The Encodian action is not returning the data escaped... depending on the size and how you are viewing the data, Power Automate may display the data in an escaped form. It doesn't work for me. No matter what I do, some random backslashes are added, so using your example, I get: [{\"Team\":\"Aston Villa\", ... etc
