The only Easter eggs that I saw were Beast, plant from Wall E, King Trident reference from Little Mermaid in the Princess and the frog, town from Coco, Dug from UP, Luca’s Town poster, and “Let it go” reference from Frozen in Encanto.
I only missed was the Ratatouille magazine

the thing with Dug in Rattatoe, town from coco in cars 3, town from luca in soul.....they are pre movie easter eggs. pixar likes to throw in a hidden easter egg for the next film (Duke Kaboom toy in Incredibles 2, kid reading a mr incredible comic in finding nemo, lotso appearing in up, etc)
That’s why I didn’t recognize the town when I saw Cars 3 in theaters. I would of been very disappointed in myself with that cause Coco is my favorite Pixar movie.

Jair was right there is a reference to Aladdin in Princess and the frog there is a scene where somebody takes the carpet from Aladdin and blows the dust off in the wind (which I think is the opening scene to when Tianas an adult but I'm not quite sure when it is)

Too bad they didn't do the retrospective Easter egg in the opening scene of Pinocchio. When we see Jiminy finish singing When You Wish Upon A Star, you can see Alice in Wonderland and Peter Pan books in the background. Foreshadowing future Disney projects.
