Hardest hitting point in the presentation was the comparison of the linear nutrient-mining system vs. the circular nutrient-cycling system. That pretty much sums up the difference between agriculture and permaculture.

PDC Spring/Summer 2020 here... I ended up doing a deep dive (of many) to understand the soil origin and hydrology or Guam. 100's of Nick Zentner geology videos later... I get the different layers niw from green rock gravel to purple clay oxidizing red to chalk and limestone shards... and those pillow basalt boulders. Making a garden soil that is not native Savannah habitat is a challenge.

Then how do we have tropical rainforests? Is it because of constant rain and lots of organic matter? Good video, but made me ask myself if tropical soils are less favourable for agriculture.

The whole image is flipped. They write it all normally on their own side of the glass and when they flipped it in editing the only thing that would've ended up being visibly flipped is people's faces, but it makes no difference to the audience if the speakers' faces are flipped so it all appears normal. I'm glad you asked this question cuz I hadn't figured it out yet til now either.
