извените...курнул...но....пришла мудрая мысль!!!между снятием мяса с мангала или из чего угодно ДО подачи должно быть 10-15 минут... мясо должно ДОЙТИ и подостыть....да и на кадрах видно. что они не обжигаются...и эта вот маленькая но ГЛАВНАЯ ВЕЩЬ СОВСЕМ И НЕ УКАЗЫВАЮТСЯ.. А ЭТО ОДНО ИЗ ГЛАВНЫХ ДЕЙСТВИЙ В ПРИГОТОВЛНГИИ всего... и выпечки и мяса. С УВАЖЕНИЕМ ! повар высшего разряда.. стаж 31 год... Удачи ВСЕМ!
