GREEN CHILE CHICKEN ENCHILADAS 3 WAYS: flat, rolled & in a casserole

  • These green chile chicken enchiladas are so delicious, you'll want to make them all the time. And when you do, you can now prepare them 3 different ways: flat, rolled & in a casserole. It starts with a creamy sauce that you can make with mild green chile or fire hot chile, depending on how you like it. (I like my chile hot enough to let me know that it's there, but not so hot where I can't enjoy it.) If you're feeding kids, go with mild. I like to roast and peel my own chile every year and keep plenty in the freezer. But I didn't do that this past year, so I'm making do with chile from a can. No worries, it's still scrumptious.
    It's a little difficult to specify exact amounts of each of the ingredients, because it really depends on how many enchiladas you want to make and how much you love cheese and onion. The sauce is enough for a large dish of rolled enchiladas or a large casserole. Should you only make a few, put the leftovers in the fridge, and heat it up the following morning and pour it over eggs. It's the breakfast of champions! In my home state of New Mexico, it's actually quite common to fry an egg and put it on top of your enchiladas. When the yolk runs over it, there't nothin' like it!
    That said, here's a list of ingredients for these Green Chile Chicken Enchiladas. But I'm not going to bother with exact amounts on some of the items.
    Corn tortillas (or large bag of tortilla chips)
    shredded chicken (typically 3 breasts cooked, or you can grab and shred a rotisserie chicken from the supermarket and save yourself some time.)
    1 10-ounce can cream of chicken (plus 1 can water)
    1 10-ounce can cream of mushroom (plus 1 can water)
    green chile (approx. 1/2 to 3/4 cup)
    shredded cheese (go with mild cheddar, colby jack, or muenster)
    chopped onion
    canola or vegetable oil for frying

    I live in the northwest corner of New Mexico. I love watching how we all do enchiladas a tiny bit differently. All delicious. I will try yours too, mmmmmm. The only bad thing about an enchilada is not having one. 💖

    I always add 1 can of diced jalapeños to give the sauce an extra kick. Northern New Mexico boy here and I learned how to make my green chili chicken enchilada casserole dish in my Home Ec class in Questa, New Mexico back in 1994.

    I use one can of cream of mushroom and one can of cream of chicken and 1 can chicken broth. I use less liquid for a little thicker consistency! Yours look delicious

      @@marcyinspired1442 ha ha agreed! My family Sold the last hatch chile farm in 2020. Chile can be 3 meals day, and chile issues healthy and an anti inflammatory! No chile, like hatch Chile! Look forward to getting some green Chile and makers rellonos!!!

    Your video made me hungry!!! You gave me some good ideas. I once made green chile enchiladas with white corn tortillas and the tortillas got mushy cooking in the oven so I use yellow corn tortillas for this dish now. My sister-in-law dots the enchiladas with small pieces of Valvetta cheese before placing it in the oven and it comes out really creamy and cheesy. Thanks for the new ideas. God bless you.....

    I also make my green chile chicken enchiladas with the Cream of mushroom and Cream of chicken soups and Hatch green chile's
    I add garlic powder, onion powder, cumin, and pepper to my sauce.
    I also add chicken broth, milk, and some water. Did you add any spices to your sauce? I am also from New Mexico.

    Marcy, these look absolutely yummy!! I can't wait to try the flat enchiladas and the casserole. I love salsa verde but I think the sauce is made with tomatillos, isn't it? The past few years I have been unable to eat anything that even hints at spicy heat. I believe I can eat these enchiladas since the cream soup would make the sauce less spicy.     I know it’s not authentic but I used to have them prepared similar to a layered lasagna (with corn tortillas though) when I was a kid so like a mixture of your casserole and your flat versions. Loved it. I enjoy them rolled as well though. Cute dog btw omg ☺️

    I've never seen enchiladas made with soups. Mostly I've seen people use canned enchilada sauce, red or green, or use dried chiles to make the sauce. Of course in the US we make them casserole style. In Mexico, where we lived by Cd Victoria they put queso fresco or shredded meat in the coated tortilla and fold them, like your first ones but folded. I had them once from someone from San Luis Potosí but they were flat, I think I felt like they were tostadas but with a "chile" tortilla, but I don't remember exactly.
    So that's my experience with enchiladas. I found the differences here very interesting. There's so many variations in mexican food, even from San Diego to Los Angeles. And then it's constantly changing, it seems to me that Tijuana tacos have changed over the past 20 years.
    I love entomatadas made with fresh tomatoes and enfrijoladas, made with blended black beans, too.

    I would look into what Canola oil is made of and how bad it is for you. I stopped using it a couple of years ago and now use Avocado oil as it is flavorless and goes with everything.

      When I don't roast my own chile, the cans I buy are Hatch diced green chile (It's a yellow label with red & green writing.) I also buy 505 Southwestern Hatch chile in a jar. Both are great options and can be found in mild, medium, or hot.

      I got them in Juarez about 30 years ago and they've really lasted (although most of the matching cups have broken). At the time, I was working in El Paso and would cross the border frequently. I'm often asked about them and I tell people you can search for them on Amazon under "Mexican barro dishes."

      Chilaquiles are just enchiladas where the tortillas are cut or torn in small pieces, so technically, you can call the ones I made in the casserole dish chilaquiles.     As a lifelong Texan I am used to rolled enchiladas. I am curious why some NM restaurants absolutely REFUSE to make their enchiladas "rolled"> Makes no sense at all to me...

      That is so funny. I suppose it's a regional thing. I absolutely love them flat and prefer flat to rolled because that's how I grew up eating them. Of course, when it comes to enchiladas, I eat them any way they're prepared. I love them all!

      @@marcyinspired1442 And I absolutely understand "how I grew up" BUT don't you agree that some NM restaurants tend to "skimp" on fillings especially chicken and beef when making the enchiladas? Every place I've had them there was very little of anything BETWEEN the tortillas except a little cheese.

    Yes but the New Mexicans do the real chili verde..I'm not sure about the cream/mushroom of chicken. My m.i.l & familia do do them flat though with an egg on top and salad on side or red rice. New Mex is notoriously known for the best red & green dried chilis..just saying..

    Looks yummy, but cream of mushroom & cream of chicken are not the authentic way to cook NM/Colorado chili verde! You would just use flour & oil to make a rue and then add your chopped or shredded roasted green chili (8 to 12 peppers depending on size of your pot), home made chicken stock or other stock, fresh minced garlic & salt to taste. That's authentic chil verde and how my Martinez mother & Chavez father taught us!

    I simply don't understand WHY New Mexican folks serve enchiladas FLAT. Makes no sense as rolled offers so much more texture and filling size. My son even asked if he should use a KNIFE to eat the flat enchiladas! Another issue I have with the flat enchiladas is that it is REALLY easy for the restaurant to "skimp" on fillings because the whole thing is covered with sauce.

      You get more stuff on a flat enchilada than a rolled one as you can't put as much fillings in a rolled one... Use some logic eseeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeee!!!
