I'll never understand how a stone hashira would use breathing techniques, which are aimed at a wrecking ball, with a katana.

Well, according to the author, they don't actually use any techniques. That's just for show. All they're using is a sword and that's it. So what we see, is just exaggerated for the sake for performance but not what is actually happening.
