I know this is a year late lol. But atleast at my resturant we dump the water/oil mix into the oil waste. The people that come pick up our old oil filter out the water.

Plastic bucket, metal spoon to scratch it up, truly you are a master at selling oil.
I'm only watching this cuz I saw a "bar rescue" video where the cook didn't know how to clean/change the oil. Lol

Aren’t you supposed to use some type of degreaser? That new oil looked really weird too, white and foamy doesn’t sound right. I wouldn’t eat here
Our hotel uses a degreaser along with hot water from an always hit hose.
it is foamy because he uses cheap, hydrogen trans fat oil.
