    Ingredients (1 serving):
    For the Chia Pudding:
    ▪️2 tablespoons chia seeds
    ▪️1/2 cup milk (dairy or plant-based)
    ▪️1/2 tablespoon sweetened shredded coconut
    ▪️1/2 teaspoon vanilla extract
    ▪️1/4 teaspoon liquid stevia (or 1 tablespoon agave or maple syrup)
    ▪️1/4 cup grated carrot
    ▪️1/2 teaspoon ground cinnamon
    ▪️1/8 teaspoon nutmeg
    ▪️1/4 teaspoon salt
    ▪️2 tablespoons crushed walnuts
    For the Topping:
    ▪️1/2 cup cottage cheese
    ▪️1/4 teaspoon liquid stevia (or 1 tablespoon agave or maple syrup)
    ▪️1/4 teaspoon vanilla extract
    Instructions
    1. In a bowl, combine the chia seeds and milk. Stir well to ensure the chia seeds are evenly distributed.
    2. Add the sweetened shredded coconut, vanilla extract, liquid stevia (or your preferred sweetener), grated carrot, ground cinnamon, nutmeg, and salt. Mix thoroughly.
    3. Let the mixture sit for about 5 minutes, then stir again to prevent the chia seeds from clumping together.
    4. Cover the bowl and refrigerate for at least 2 hours, or overnight for the best results. The chia seeds will absorb the liquid and form a thick, pudding-like consistency.
    5. For the topping: To a blender or food processor, combine the cottage cheese, liquid stevia, and vanilla extract. Blend on high until the mixture is smooth and thick. Add a splash of milk for a thinner texture if desired. Add the mixture to a small bowl and refrigerate until you're ready to serve.
    6. Once the chia pudding has set, add the crushed walnuts, and give it a good stir. If it's too thick, you can add a splash of milk to reach your desired consistency. Top with the sweetened cottage cheese mixture.
    7. Optional garnish: crushed walnuts, shredded coconut, cinnamon, grated carrots.

      Bahahaha good deal friend 😝😝😝I actually just came across ground chia seeds so I’m gonna try them in one of these pudding recipes to see how different the texture is!!

    So could I just use flax seeds they were cheaper at my pricer store but it is also my local store.

      Honestly I haven't tried with flaxseed personally but I just googled it and it looks like YES YOU CAN use flaxseed! I recommend using 1/2 cup ground flaxseed and 1 cup milk, and then keeping everything the same! :) Then refrigerate for at least 30 minutes!
