How to cook BBQ Ribs - Pork Ribs - Pit Boss Austin XL

- These BBQ pork ribs came out fantastic on the Pit Boss Austin XL. I used the Pit Boss Hickory and Fruit Blend pellets, which you can find here pitbossgrills.77jaha.net/5Vrzj It really allows you to do some low and slow bbq. The best part of it, you don't have to manage fire, light charcoal, nothing just make sure it has pellets and your good. I used a mix of Hickory and Fruit blend from Pit Boss. I seasoned both ribs with Uncle Steve's Shake Original and Spicy R, they are both really good blends and were really tasty with a sweet BBQ sauce. unclestevesshake.com/ is where you can find this rub, for $6 a bottle you can't beat it.

The vinegar in the mustard also tenderizes the meat and helps to build the crust in addition to being a binder.

Another great video Kirby those ribs looked fantastic. I don't ever remove the membrane until after the cook, my experience is you get juicier ribs plus after they are cooked the membrane comes off so much easier. Thanks for sharing and have a great day.

Lol I also remember first time cooking shrimp my family and I were eating it and they asked me if I removed the black stuff. I said no. I didn't know. Lol we were eating shit LMAO. I am having a lot of fun with mine. It is really easy to use and not hassling with lighting charcoal eases up the chore. It is so versatile also, you can do low n slow, hot n fast and sear on it. The flame broil gets really hot, I found putting it at 350 is perfect for me. I like to sear but not too intense flame.
Just found your channel and have already learned a lot. I noticed you had another temperature gauge for your grill. Can you explain that. I just recently purchased a Pit Boss pellet grill and am getting used to it. I've noted the two thermometers (left side and cover) can be 100 degrees different. If you are using a separate thermometer for a more accurate reading, that would be a good thing to know. Thanks Kirby.
Hi William, I use the thermometer just out of habit monitoring my cooker temp. I stopped doing it on the pellet grill. It is very consistent and maintains its temperature.
BRO!!! I bought the Pittboss XL about 2 years ago and couldn’t get it dialed in until I saw your video! My results before made the ribs tough and badly chard. It was told to me to set it at P4 more (heat less smoke)until you said P6 which is more smoke less heat. I went to P7 and doing 2 racks now. I WANNA SHAKE YOUR HAND! Lol!! THANKS!!

love my pit boss also Austin XL but i do have a problem with is cutting off and i notice the pellets are all at the bottom on fire. I have our setting at P4 can you advise please

I see you put foil under the grill how much do you use and do you recommend it? Do you do this when you dont want to use the open flame?
Hows it going brotha, I use my pellet grill mostly for smoking. I use 2 sheets of heavy duty foil to cover the heat deflector. It really makes easy clean up.

Hey Kirby u got me messed up bro. I never thought I'd be thinking of going to a pellet smoker but you got me really thinking about getting the Austin XL. Was wonder how much pellets do you use on a normal cook, like on a pork butt, brisket or ribs?
Hi Victor, its actually really efficient. One 30 lb bag lasted me about 7 small cooks and still had leftover. I did a 21lb brisket and it used about half a hopper. That cook was 16 hrs. the hopper holds about 30 lbs of pellets. Compared to charcoal, one rib cook I would probably go through at least a half a bag on my offset, not including wood chunks. So from what I see, its less cost vs charcoal. Its cooks really good and does have consistent heat without having to manage a fire.

Also when it came in and you assembled it did you have to seal it at all, or did it come without any leaks?
No I didn't seal anything on it. It actually does really well and exhausting the air flow to the smoke stack. I usually put lava lock on there, but its really solid and didnt feel it needed it. The lid is heavy, so it stays closed pretty good. Its not cheating brotha, its convenient. I have hot weathers coming right around the corner. It is really hard to manage fire in 120+ degree weather.

For easy clean up, trust me, dried up drippings on the metal of the deflector is hard to scrap off.

I have an Electric upright smoker and a horizontal smoker with the hot box off the side.
Hows it goin Roger? cook them for about 5 hours at 250, 4 hours at 275, or 3 hours at 300 in the electric smoker the day before. That way the next day all your doing is heating up the ribs and putting BBQ sauce on it.
