    Rohu fish, also known as Labeo rohita, is a popular freshwater fish in South Asian cuisine. Here’s a classic Bengali-style Rohu Fish Curry recipe:### Ingredients:
    - 500 grams Rohu fish, cleaned and cut into pieces
    - 2 medium onions, finely chopped
    - 2 medium tomatoes, chopped
    - 2 green chilies, slit
    - 1 tablespoon ginger-garlic paste
    - 1/2 teaspoon turmeric powder
    - 1 teaspoon red chili powder
    - 1 teaspoon cumin powder
    - 1 teaspoon coriander powder
    - 1/2 teaspoon garam masala powder
    - 1 bay leaf
    - 1/2 teaspoon sugar (optional)
    - Salt to taste
    - Fresh coriander leaves for garnish
    - 3 tablespoons mustard oil (or any cooking oil)
    - 1 cup water
    Instructions:
    1. *Marinate the Fish:*
    - Rub the fish pieces with salt and 1/4 teaspoon turmeric powder. Let it marinate for 15-20 minutes.
    2. *Fry the Fish:*
    - Heat mustard oil in a pan until it starts to smoke. Reduce the heat and carefully fry the fish pieces until golden brown on both sides. Remove and set aside.
    3. *Prepare the Masala:*
    - In the same oil, add a bay leaf and the chopped onions. Fry until the onions turn golden brown.
    - Add the ginger-garlic paste and sauté for a couple of minutes until the raw smell disappears.
    - Add the chopped tomatoes and green chilies. Cook until the tomatoes become soft and the oil starts to separate from the masala.
    4. *Spice it Up:*
    - Add turmeric powder, red chili powder, cumin powder, and coriander powder. Mix well and cook for another 2-3 minutes.
    5. *Simmer the Curry:*
    - Add water and salt. Let the curry come to a boil.
    - Gently add the fried fish pieces into the curry. Reduce the heat and let it simmer for about 10-15 minutes so the fish absorbs the flavors.
    6. *Finish and Garnish:*
    - Sprinkle garam masala powder and sugar if using. Stir gently.
    - Garnish with fresh coriander leaves.
    Serving:
    Serve the Rohu Fish Curry hot with steamed rice or roti.
    This dish captures the essence of traditional Bengali flavors and is a delightful treat for seafood lovers. Adjust the spices to your preference and enjoy the rich, aromatic curry.
