definitely true. Day-old rice is a little bit dryer and firmer than fresh-steamed rice, so you can easily break it up and mix it with other ingredients. If you use fresh-steamed rice, it can become really mushy when you stir-fry it because it contains too much moisture
刘士伟 you can still use fresh steamed rice but use less water when cooking. I usually use a 1:1 ratio of rice to water (½ cup of rice cooked in a ½ cup of water for example) and it works well if you don't have overnight rice

The way my grandma taught me how to cook rice is the water level should be half of your index finger tip higher than the rice and I have never cooked it wrong with this method. Instead my roommate actually measured up the ratio of rice and water and it came out soggy af... so I’m really proud as a Chinese person and we just have that instinct in cooking.

It's just a vegetarian subtitute, mate. The original recipe calls for non-vegetarian friendly ingredient, so they used tempe which is made from soybean but has a similar texture compared to the original ingredient. The subtitute doesn't have to be chinese. Stop being overproud.

Callum Smith in my country vegetarian means free from all types of meat along with eggs. 40-50% of population here are vegetarian, and don't consume meat and eggs.Vegan is free from dairy products too, but we consume dairy products quite a lot. So we definitely aren't on a vegan diet.

You might be thinking of vegan, which is correct. Being a vegetarian allows eggs, because it’s not an animal yet. (Don’t quote me on it)
Vegetarian = no meat, but can have Dairy and Eggs
Vegan = completely free of animal products (eliminating products that was made from animals)
Callum Smith in my country vegetarian means free from all types of meat along with eggs. 40-50% of population here are vegetarian, and don't consume meat and eggs.Vegan is free from dairy products too, but we consume dairy products quite a lot. So we definitely aren't on a vegan diet.
Ok on researching I found out that a vegetarian diet is just free from all kinds of meat and not eggs. But a Pure vegetarian diet is free from both eggs and meat. So the title of the video is correct 😅
