- Chebureki (Чебуреки) are fried beef dumplings or meat turnovers. Very popular dish in Russia, Caucasus, Turkey and more places. The dough of these dumplings is very crisp and they are very juicy in the inside. They are pretty easy to make and you need only few basic ingredients to make this recipe.

makes 12 large chebureki or 15-16 medium
Ingredients:
For the dough:
6 cups (750g) Plain Flour
1 teaspoon Salt
4 tablespoons Vegetable oil
1 tablespoon Vodka *optional
270-300ml hot Water
For the filling:
700g (1½ pounds) Ground beef/lamb
1 large Onion
Salt to taste
Black pepper to taste
1/4 bunch Parsley
1/2 cup (120ml) water *or more if needed
vegetable oil for frying
Directions:
1. Sift flour into a large bowl. In a separate medium bowl mix salt, hot water, vodka and oil. Add the liquids to the flour and start mixing until dough forms, if to sticky add more flour, if to dry add more water. Turn the dough into a clean working surface and knead until smooth dough forms. Place in a bowl, cover and let rest for 30 minutes.
2. Meanwhile make the filling: finely chop the onion and parsley. Place the meat in a large bowl, add chopped onion and parsley, add salt, black pepper and water. Mix until combined and set aside.
3. Divide the dough into 12 equal parts. Shape each portion into a ball. While working with one ball cover the rest with a towel. roll each ball into a thin circle, Place about 2-3 tablespoons of the meat mixture over one half of the dough and spread evenly. Fold the empty part of the dough over the meat mixture. Using a fork seal the dough.
4. Heat vegetable oil in a large wide pan. When the oil is hot fry the cheburki until golden brown. About 2-3 minutes on each side. Transfer to a paper towel to drain. Serve warm! - Jak na to + styl

Dazzling! I grew up in the country where Чебуреки were prepared as a street food and favorite home made food. Nevertheless you give so many good tips that I had no idea about. Thanks dearest Cooking Foodie!
Thank you for sharing your recipe ! I'm gonna try it
I thought, that vodka added to chebureks' dough is some kind of meme, but when I see Westerner addes this...
Comrade Boris did it better!!!
@@SilusValeriusVT comrade boris had a great and caring babushka
By adding vodka you avoid the formation of gluten, which makes the dough tough and chewy, since gluten won't form in alcoh.l. Doesn't have to be vodka, but generally something that's 80 proof like most vodka is.
@@manta_man2346 mine is 40 proof oof
@@manta_man2346 Great explanation. In Brazil we use cachaca.

I'm sorry but I have to say Boris (Life of Boris) did it better, but as long as he lives he will be god of slavic cooking.
It looks like Mongolian Huushuur which is fried dumplings 🥟
Muy ricos una pregunta la carne llega a cocer bien friendo nada mas?
Yo soy adorador de la harina frita!
Thank You
Waw so yummy 😍😍😍😍 Thank bb
Thanks :)
I had this three ways one was a breakfast called Fat Russian with scrambled eggs sausage and ham, the other was like a stewed meat called the Moscow and another with ground meat, onions, and rice it may also had minced bell pepper called a Boo's...all three were delicious. The food truck was called 'With Love From Russia in Aurora, Oregon. Been there twice and will be going back for more....unless of course I can make it myself. Thanks for the video
OMG WE HAVE THIS IN BRAZIL!!! It's called "Pastel" and is literally the same thing!
It's a small world
Yum!

My Mother in Law would make these. When she knew we were coming she would busy herself filling the fridge with Chubereti and Pelmeni. and they were gorgeous.
month-watering ! I like the dough, it looks so soft

Jéme je vait le fère merci
Para mim a carne ficou um pouco crua... não precisaria fritar antes?
Yummyyy 👌
Baking powder ?
No need to add unless you want toxic balloons instead of food
We call it here in the Philippines as empanada inspired by Spanish. The only difference is we don't add vodka or any alcoholic drink. Maybe I could try it with rice wine :)
I just made cheburek but I followed boris recepie
Question: is 2-3 mins per side enough to get the raw onion+meat filling properly cooked?
Don't worry you can cook whole in there it's hot enough
Do you really have to add vodka to the food? Cuz I'm trying to make one, but at the same time I'm not alcoholic.
The alcohol all evaporates away, which is the point - makes it much lighter and better dough. You can replace it with same amount of water tho.
Wawwwww
I seem to have burned dough and under cooked filling. Any suggestions???? Thanks

Since when you use vodka For chibureki ?

@@SilusValeriusVT that's a fact, comrade
What purpose does the vodka serve please
Vodka make the dough crispy crunchy after it cooked.

Hi, i love you
how could that be enough water for 6 cups of flour
I did exactly the measurements that the recipe said, but the dough turned out very crumbly

Watch boris recipients instead! (No hate)
In Russia and Caucasus mens are not allowed to work with dough because of hair on hands..)
Could these bake instead of frying?
Only if you enjoy the taste of failure
Taylor Industries 🤣I deserve this!
@@jenncrockett4070 if you bake them the meat will be raw and the shell will be hardened
My dough turned out way to hard.. maybe the water was too hot? I messured everything exactly.. hmm
It can happen. Add few tablespoons of water.
@@TheCookingFoodie yeah i did that but still. Hmm maybe next time ^^

Dear Cooking Foodie,
at risk of sounding creepy, I must confess I'd watch you kneading dough for hours.
Sigh 😊
Ah, é tipo um pastel gringo
нет
Dough came out much dryer than seen in the video, it was nearly impossible to knead
You should always adjust water yourself based on how dry it is. It differs around the world how much water your specific flour needs. Use your gut and just add some more until it reaches the right consistency!
2:58 WTF is this sorcery.
If I would copy this recipe exactly and tried to do it I bet it would stick to the table like a super glue.
