  • First off i apologise for the audio, my new mic is terrible so its going in the bin.
    This is a full grown Muntjac Buck. One of the smallest Deer we have here in the UK. Despite its size, it amazing what you can yield from it with a little creativity. Enjoy.

    Your an amazing dude your videos about 10 years ago got me into meat cutting and I loved every minute of it unfortunately I have had to quit cutting swingin beef and pursue Another trade I miss it every day man 🤘🏻

    Scott, I love your channel and the videos you make. This one is exactly why I subscribed. I started by hacking through my own whitetail deer (USA) and moved to processing my own pigs. I picked up hunting/processing as an adult - was not raised with it, but was able to pass it on to my 4 boys (working on the processing part). I do some sausage and love the work/art! Keep doing the videos you do - I watch every processing video and - even made my own Rusk based on what you have presented (still working on the sausage tying) - Thanks!

    I got a mule this year, and due to most small butcheries processing predominantly beef due to the closure of quite a few large operations, I was unable to find anyone to butcher my deer for anything less than absurd. Thank you so much for your videos! You make this look a lot easier than it really is!

    This is so much better than volume/production butchery.

      I wish we had Minnesota size deer here in FL!!! We have Key Deer but, ya know, endangered and all...and our whitetails are somewhat diminutive compared to yours!

    Scott Like always a pleasure. It's amazing how it seems the deer meat is growing and growing. 1,000% impressed with your butchering of the venison. I live in the Southern tip of Texas Let me know if I can mail you anything you have been wanting to try out. This area is "Mexico" I know it's in the U.S. But the primary language is Spanish. you have to drive 60 miles north to come to a border patrol inspection station.     Interesting, that looked to be about the size of a spike buck here in Texas. Where my cabin is Im allowed to harvest two does and two bucks. The bucks can be ether a buck with a 13 inch (330.2 mm) spread or a spike buck. Its a bit more complicated than that but that is the basic of it. So Ill try this on my next spike buck.

    I'm from South Alabama, deer down there ain't much bigger and Florida Key's deer are smaller (no hunting them Key deer, barely enough to survive as a species). ...and, I still dream of a CZcams video of you going out West to butcher a Buffalo or Beefalo. Those things are HUGE and I bet that inner 6 year old would giggle with glee to work on a few of those.

    Great video found one freshly killed on road tonight is that a hacksaw? Do you know if there best to hang them for a day or so before skinning? I paunched mine and skinned it asap after finding but wonder if id be better next time hanging it for a day or two first obviously after gutting it

    So I just made venison sausage, which I added a premade spice blend however I forgot to add the salt which was ment to be added in addition. Iv left them in the fridge for two days to dry out a little. Just wondering if youd think there is a risk of food poisoning without the salt? They arent being smoked just fried. Bloddy nightmare 😭.

      Think they've become a problem in Suffolk due to over breeding and they're in the New Forrest.     Sorry, was enjoying this right up to the point you suggested it was okay to head shoot a deer. It is not acceptable in any way, shape or form. They should be heart shot which only damages the heart an a little bit of ribs each side. Neck shots are dubious too unless very close.
    To encourage such practice is extremely irresponsible.

      I will always look for a neck shot, and will happily take a head shot if I am sure of it. Only take body shots if there is no other choice. Don't push your silly opinions on others. You don't like head shots, don't do it. I don't like shooting deer with blades on sticks, so I don't do it. I won't say that it is irresponsible and inhumane and frankly stupid.

Also, why is it that you have not addressed in the comments the wearing of rings while you process your food even though the scientific community mostly agree that that point on your hand is a hotbed of bacteria? The key here is that you have not responded to the criticism, not the potentially arguable statement. And why is it that you have prison tattoos on your hand when you have never been in prison? Just another hipster doofus here folks. A particularly talented butcher, it's true. But a hipster doofus nonetheless.

      If not... "They eat absolutely fantastic" is a perfectly English way of saying, "They eat absolutely fantastic". Scott speaks English perfectly and needs not to be confused with American English.
      As to his rings. Oi vey. Give it a rest. I leave mine on when preparing my food. It's my food. If Scott is butchering for a client the rings come off.
