    In this video, I show you how to make simple, 2 ingredient pancakes using ripe plantains. You can buy yellow plantains and let them ripe further on your countertop.

    Aqua faba is latin meaning "bean water". You can get from the can of chickpeas or when you cook dried chickpeas.

    Try 2 Tablespoons almond meal and 1 Tablespoon coconut flour instead of wheat flour for a gluten free pancake.

    In Ghana we add ginger and other spices of our choice but no vanilla this has been a ghanaian dish for ages. We eat it with beans

      this is Ghana food we eat with beans and we call it totale or pancake.

      @Vangy Rebecca.. really. It doesn't seem that it would taste good. But I'm sure it does. Avocado with dates or maple or agave. I'm going to try that. It's funny how some food combinations don't sound like they will taste good but they do. Someone that I work with told me she was raised to eat oatmeal with black pepper. She said it taste good. I have yet to try it. I like my oatmeal with sugar. LOL

    I will be making this for my grand-nephews... I just made tacos with all peppers & veggies and black beans for the "meat" (texture & flavor) for my family; they are nearly converted lol. //sidenote: my youngest turns 25 today, although undiagnosed, I believe he was autistic after inoculation. By instinct ( & The Holy Spirit 's direction), I massaged my sons nightly and after moving to Hawaii when they were toddlers, I fed them strictly vegan (I couldn't afford meat, dairy, or fast food thankfully). He just began a MBA program on full scholarship. The brilliance remained, and the motor skills & speech healed. Bless up Mommy!!💕💕

      You do know that the levels of mercury in vaccines years ago were a miniscule amount compared to how much is in breast milk , and still is today ! So how do u explain that ? Since mercury is the cause of it all to you anti- vaxxers. Please do explain . If that was the case, all breastfed children should be autistic right?

    I let them go blacker and softer which in turn sweet. The green plantains are used for tostones and Mofongo.

This is the reason I am doing this - people like yourself who appreciate that this is a very restrictive diet already, so I am creating dishes that will please and satisfy the palate. We humans eat to live, but we also live to eat and the food has to be pleasing to the eye and taste buds. If it is not, we would not stay on a diet like this.     Great job! You needed a "binder" to create the pancake effect. Some parts of Nigeria use the really dark ones to make "Plantain fritters" . You blend the plantain, mash or knead it, add crushed pepper, salt, nutmeg if you like, use a spoon to scoop and fry in palm oil till crisp but still slightly moist.

    I love this!! We love plantains, I always fry them when they're ripe, or I bake them, we never get tired of it! It never ocured to me to make pancakes out of them. I'll deffinetely make them with the flour. Thank you so much for sharing!!!

    You're a freaking genious lady! I already eat fried plantains for breakfast but sometimes it's not over ripe enough so I can't mush it good into my little chips. So now I can do this with a little water, blend it, find an egg substitute and turn it into a pancake. I think this will make my less soft ones cook better. Thank you!!!

    I love these ripe plantain. Fried green plantain is like frenchfried potato. The ripe ones are sweet, and are like fried banana.

      Yes it takes a tiny amount of chick pea water - 1/4 cup will make quite a lot of the foaminess. :)

      Actually modern bananas are a human invention. About 5-10k years ago, humans cross bred 2 species of bananas to create the first commercially viable banana. From this we get all the varieties of modern bananas. Bananas are naturally small, fibrous and full of seeds.
      Same thing for broccoli, Brussels sprouts, kale, and cauliflower. They are all a product of human selective breading of cabbage.

      Thanks for the support. You can also add Baking Soda if you wish. Baking Soda is an alkaline substance and it would add more fluff to the pancake. Just about 1/2 tsp. I just wanted to do a two ingredient presentation. Thank you for the support.

    it takes a long time too when I cook oatmeal waffles/pancake. I have added a flax meal egg and the cook time is shorter. this is a good recipe. I will try it.

    Thanks for sharing! I tried this today, but didn't have any aquafava so I used some leftover wheat flour, baking soda, milk, and flax meal. I used coconut oil to cook them and even the boys ate them! I know it's not close to the NG but it was my baby step! Thank you for the idea!

    You can also cook it without oil base since you cooking it on non stick you may get a more airy fluffy that cooks quicker

    I made this basic recipe and added 1/4 cup spelt flour and 1/2 teaspoon baking powder. I also added Chopped Walnuts and topped it with fresh srawberries stewed lightly with a little lemon juice. Yummy.... they last about 2 minutes on the table.

    A cup of cooked quinoa would be great as well. In addition to the flour. It would allow you to make more batter and add protein.
