  • We make our first attempt at homemade pickled okra using a recipe we found online! The raised bed garden produced very well this year, with us gathering more okra than we ever have in the past.
    Recipe makes roughly 4 pints
    Brine
    2 cups water, 1 cup cider vinger, 1 cup white vinegar, 1 Tbs sugar and 2-3 Tbs salt
    Seasoning
    2 Tbs dill seed, 1 teaspoon dill weed, 2 Tbs minced garlic, 1 chili per jar

    i got one blackberry cobbler. i haven't canned in the last 10 years. moved to a farm loaded with blackberries and its like they just dried so fast. temps been 90 to 100 here and dry. i am glad i found your site been looking for 3 days for a good okra pickling,

    I don't like okra, but have never tried pickled okra. I'll give it a try if I ever see some... I discovered last summer that pickled green tomatoes are awesome.
    I asked my 86 yr old mom (who's been eating okra her entire life) if she's ever tried pickled okra, and she says she's never heard of it.

    Just a quick tip from an "old" canner, if you only have a few jars to process you can sit empty jars in your canner to take up space. This keeps your jars from falling over. Loved the video, keep up the good work!!

    if you put the stem side okra in first then add the stem end up its easier to get a tight pack in the jars

      @@TKCL Happy to share, this video brings back childhood memories, I'm going to see if I can find my grandmother's old canning journal, she had recipes for anything you can imagine, some of them going back hundreds of years.
      While I am something of a plant assassin myself, we are blessed with a number of produce stands where one can procure fresh local produce at a reasonable price, it may not be less expensive to di it that way, but last year my tomato harvest cost me about $20 each, not including water and my time, so for me buying the produce instead is a pretty good deal.

    Love me some pickled okra! When I get some I try to save it... It last 4 or 5 hours after I open the jar.

      Lol, that's gone pretty quick. I hope we can put up several more jars and find a good recipe before the garden stops producing.

    We love pickled okra! We have had great success with "Mrs Wages" pickling products, ( prepared spices). Can get these at most grocery and farm / hardware stores, online too. We always add jalapeno peppers to ours and use the spicy mix. Good luck on yours and let us all know how they turn out. 👍

      The pre mixed pickling spices is something I'm interested in, thanks for recommending it. We grow jalapeños and thought about using them, most of the store bought pickles okra we love uses chilies so we decided to try them.

      Okra is one of those vegetables people either love or hate. I didn't care for it when I was younger, but now I love it. We have found many different ways to cook it over the years and that's helped open my eyes. I just started eating it pickled a couple of years ago and enjoy it.

      Great! Hate to admit it, but I've yet to run grease through mine. Been extremely busy with work and home projects. Plan to grease everything very soon.

    In trying different recipes since, what did you decide was your favorite/preferred one? ACV or white vinegar..among how you might have spiced?

      Everything the same as shown except 1 part acv, 3 parts white vinegar and 4 parts water. Seems to be perfect.
