are we able to headless SSH into the pi via LAN rather than wifi? n00b here. Also, where's the video tutorial link about how to ssh into our RPi?

As long as you have SSH enabled and the Pi connected to the LAN, yes. If it's a Pi Zero, and you are not using a network hat, then unfortunately not.
