Hey from the first charter company down in Freeport, the least I can do is tell you when you fish the gulf you have to make sure to go as light weight as possible. I fish 100 feet and use 1 OZ weights maybe 2 max on Rough days. We catch 20 pound mangroves for fun and huge snapper. Get some shad and you’ll have a good time. Maybe even some sand trout. The gulf has so many snapper it’s not even funny. But man I’m telling you the lighter you go the better results you’ll get. Even for grouper the lighter you go the better it’ll be. Just trust me. I caught a 21 pound mangrove literally free lining a shad with no weight. The bigguns like the natural and slow sinking baits more. Tight lines!!

A tip from a concerned fellow cook when putting your fish in the grease put it in and push away from your body so that it doesn't come back on yourself

I been living out here on the west coast for 10 year. I'm originally from the east coast Miami area. . The fishing here is definitely different.

And, when it comes to eating high quality fish, simple recipes are better recipes.
Why run 40 miles off shore to catch tasty fish
and then smother them in 20 different ingredients?
If you do that It might as well be store-bought tilapia underneath all those ingredients.
And, your ebullient personality was on display throughout!

I am not sure where you are at. But on the northern Gulf Coast we only get one high tide and one low a day, and usually just about a foot in difference. Y'all on the east coast get so much more.
I will not fish straight braid I always topshot stretch and abrasion resistance are usually more of an advantage
