I thought stealing the car just meant being with someone she likes, and going to jail was the symbol for getting into a relationship (ie facing the consequences of being with that person). I feel like her relationships were expressed as "jail" because her fame constantly puts them under scrutiny (hence the wanted poster). Instead of getting into an official relationship she has to burn the bridge with the person she likes (ie stop riding with them) to avoid the consequences (like scandals, represented by the wanted poster) that can affect both.
Yeah, for me the guy biting the apple symbolised cheating/betrayal, perhaps based on religious symbolism. Especially because after that moment, it all goes downhill too (or kicked out of paradise, so to speak) as she's singing, "I wanna hold you when I'm not supposed to, when I'm lying close to someone else". Just my own interpretation, I guess.
