    As mentioned the 5/2 definitely did have some of the roasty quality to it but I would say the finca surya was way smokier/roastier initially. I’m sipping on this right now and it’s dominated with the brown sugar and toffee taste with pear and lemony acidity. I would say the florality has definitely dropped off a bit but still a great coffee. I knew off the bat that I enjoyed the san pedro over the surya after brewing each twice. I felt that both of your reviews nailed the experience of them.

      Glad to hear our reviews did mirror our shared experience.....minus the smokiness, but it's still so interesting that it happened. Usually there's improvement when a roaster tinkers with their coffee, but Sey will be the ones that know what happened with it. Appreciate your feedback as always 🙂

    I got this one as well and struggled with dialing it in well. At its best, it had almost intoxicating white flowers, an almost confectionary sweetness, and a very, very sharp and bright/brilliant citrus quality that made me think of passionfruit. That said, I got those qualities only at times and had trouble getting more than a couple cups to balance all those characteristics well. I was also having issues with my recipe at the time, and this coffee suffered as I attempted to solve problems with the recipe _while_ dialing it in.

      This not only mirrored our own experience, but experiences with mejorado coffees in general. We came to a very tough decision as to go with what Sey *usually* suggests or with where we *usually* find success with these coffees. That being said, your feeling on its best is what it sounded like this coffee was intended to be. No doubt there will be improvement going forward, but this start gives us a glimpse into that. Really appreciate your feedback 🙂
