- You may know Dale from Top Chef, or if you live in Park Slope, you might have seen him when you walk by the big windows on 7th Ave. that act as a portal into Talde, his temple of Asian-American cuisine. In this episode, Dale and his business partners John Bush and Dave Missoni set out on a quest to show you that there is no need to cross into Manhattan to quench your desire for late-night feasting. The crew stops at Franny's on Flatbush Ave. to eat some of the best Italian food anywhere, and then it's off to Pearl's Social & Billy Club in Bushwick where Dale secures his buzz in preparation of cooking up a dream Asian-American feast.

I actually work for Mario Batali in Las Vegas, so I know there is authentic Italian. Food goes through fashion trends as fast as clothes do. Borrowing is all a part of innovation and progression. Few restaurants have the luxury to rest on their laurels.
Food is about appealing to preference that can change on a whim. Restaurant industry is very fickle. What's hot today can be gone in 3 months.
Tomatoes and eggplant didn't even exist in Italy before 1492.

This guy is great
NY Italian food is "American" Italian. Italian immigrants assimilated ingredients and plenty of a new country. All I see this guy doing is the same thing with Asian cuisine.
It's food, one thing the world shares in common. You find things you like in new culture and incorporate in your own stuff.
BTW Marco Polo imported the concept of pasta from Asia to Italy, so it's all about sharing.

OK first of all that's not halo halo at all... there are some components he put but there is no ube ice cream. and Filipinos don't use condensed milk they use evaporated. This is obviously been changed to be more accepting of the community.

franny's isn't *that* good.. sorry. Also, they put their pizzas on plates that are too small for the pie, they don't slice it, nor do they have anything between a butter knife or a steak knife -- so you wind up with an awkward half-torn pizza and is usually too thin in the middle and gets soggy fast because it is served on a plate that creates condensation. That, my friends, is not "craft." If you want sit-down pizza in BK, do yourself a favor and go to Lucali's.
