- 'Nam Ngiao Pa Nuan' Restaurant in Chiang Rai, Thailand is undoubtedly the new 'best place to have Nam Ngiao noodles' in Thailand. Nothing but respect and gratitude to my friend Bank for being just SUCH a go-to guy for recommendations on food, and travel, and also just being such a wonderfully funny and knowledgeable dude along the way :) This has been a great trip with both Bank and Rimma, and we are very lucky to be welcoming YOU back for today's video as well!!
This dish is just packed with curry flavor, almost on the level of citrusy-tangy sometimes, while at other times just alive with throat-scorching fire! The local chilies set it off nicely, pairing with the massive umami dose of scorched tomatoes (our friend Hanuman @Thaifoodmaster taught us about this dish very well!). A great place to have it right here in downtown Chiang Rai - order a normal size pork noodle for 40 baht, or make it super-size at 50 baht. Buffalo skin 'Nang Pong' on the side, and DO NOT forget to grab a pyramid of banana leaf when you see it - full of 'Kaaow Gan Jin,' another one of Northern Thailand's finest foods...

Hi Joel, Li, Bank and Rimma 👋🤗❤️. Lovely video as always! I've never seen cracklings made with buffalo. Only pork and lamb here in SA. How interesting. We do have buffalo meat but not crackling. Lovely rich looking dishes and I've never had the pleasure of trying that cotton flower. I've eaten cornflower, nasturtiums, Geraniums, Violets, snap dragons, squash flowers, lavender and so many more but never even heard of this. Those pickled veggies made my mouth water. Love love pickled veg. I would love to have that experience. We travel via food lately lol. Make exotic dishes and experience the foreign flavours in our own home. I also wrote a book about my life and all the stories. Almost 600 pages and my sister took it lol. I wanted to throw it out and she wouldn't let me. I don't have a lot of confidence. And you are in my hometown, Chiang Rai!!! I’d say that you never find any Nam Ngeuw anywhere like in Chiang Rai- growing up there I’ve never found any place in Thailand where they could make a legitimate Nam Ngeuw bowl. Please say hi to Bank and enjoy Chiang Rai!
Thanks Bank for turning the crew on to this gem! Really spectacular place and you-all did a great job capturing all the details! Yes, well, gee, I guess I've never REALLY been to Chiang Rai, I've never had this particular Gang Nam Ngiao. Plenty of Khanom Jeen Nam Ngiaw and a Thai Yai lady a few doors down from our old place made Gang (curry) Thai Yai which had big, round noodles and was very spaghetti like. Dok Nam Ngiao is like the "poor man's Saffron" It's the inner parts of that red cotton tree's flowers, like the pistils or stamens. We have a HUGE bag of them from my wife's brother, like years supply. It's pretty easy to find, though and is one of the things you see Thais gleaning from the roadsides, waysides. Beautiful tree with giant red flowers. The "cotton" is used for stuffing the Lanna triangle pillows, ETC too. What a dish! The way they cook the meat alone is pretty amazing! And yeah; pore on those sides for the full flavor! And the rice with the chicken blood is SOOooooo good! I couldn't believe what it was when I 1'st had it. Rimma is right! That oil with the fried garlic and pepper sets it all over the top. Joel is right too! It's like the perfect food. + The Buffalo Skin (fat layer?) crackings! awesome! I want to get on a bus right now and head north!

I do remember seeing a few elderly people collecting these in the north east, but yet to see it in the north. Obviously it happens more around here though but that just shows that we live in the city :-) we just know the city life these days… :-) Ha ha
