I think you were asleep for this video. He clearly explained that the scientific explanation hinged on the turf being artificial however this particular turf was natural. Hence science couldn't explain it

The grass pitches are similar to carpets. If you land with force with studs on a carpet, it may bulge a bit. Similarly, the grass pitch may bulge too sometimes.

Just because they use natural grass doesn't mean they actually plant the seeds and wait for them to grow there... They use patches of grass, and especially in that area, they have to replace the patches frequently due to wear and tear. So it's always possible that the patch is loose enough to cause such effects.

In high school and college I worked on a golf course. We frequently saw the grass bubbles pop up if there was an underground break in an irrigation pipe. The grass on the course was well and truly established for decades but if dirt clogged the water lines and a pipe burst a bubble would form. I’d be willing to bet this is the reasoning.

Look back at football and see the state of some pitches. For ground to become firm it needs grass roots to form. Without roots the earth, mixed with rain is just mud.
