This kakigori has a very unique texture. Made with naturally frozen spring water, this high-end shaved ice dessert is saving Japanese ice farmers’ jobs. Fewer than 10 ice farmers remain after cheap freezer-made shaved ice dominated kakigori shops for decades.

I hear that it's shaved differently to how westerners might think, and has a consistency more like a dairyless ice cream. Sounds interesting anyway.

@Silver Chopsticks Maybe the culture it's like sharing culture? I've always wondering and found it interesting because many japanese and hawaii culture have the the quite same thing. Like poke and sushi bowl and quite many Japanese live in Hawaii too. Maybe because it's geograpically near each other? ^^ And btw are the shave ice in Hawaii also naturally made from spring water like those kakigori in Japan?
Maybe it's also more like because the ice is not an ordinary ice too so it's soft ! it was mentioned in this video

Hey, that vintage ice shaving machine, we are also still using that for "ABC Ice Kacang" & "Cendol" mixed ice cream in Malaysia today.

The Philippine dessert/snack Halo-halo is originally derived from Karikogori after World War 2.
Never knew before there is such an awesome shaved ice desert from nature.

Find it very interesting and it seems Cathay Pacific one world partner Japan Airlines might have them on the menu these Farmers around Narita Airport are able to instruct JAL Catering on how to make one for the plane.

This whole thing is comical. Its water with sugar syrup. You could hear the doubt in the guys voice when he was explaining the difference between this ice and that ice. Its still just ice, but if their costumers are happy, well then, thats what theyre paying a premium price for

It use harvested ice blocks instead of freezing water on freezer. So the called it natural ice.
