    블루베리의 색감이 예쁜 노오븐 블루베리 치즈케이크를 만들었어요~
    생 블루베리로 만든 퓌레를 중간에 넣어 굳혀 봤는데 잘랐을 때 자연스럽게 흘러나와 멋스럽고 케이크를 더 촉촉하게 해주는 것 같아요~^^
    위층에는 퓌레와 생크림을 섞어 굳혔는데 색감이 정말 예쁘게 나와서 만족스럽더라구요~*^^*
    오레오로 시트를 만들었는데 블루베리 색과 어우러져 고급스러움을 더해주더라구요~
    블루베리 맛이 많이 나서 상큼하고 정말 맛있답니다~

    ▶틀 사이즈 Mold size : 15cm x 7cm
    ▶재료
    블루베리 200g
    설탕 65g
    레몬즙 5g
    부순 오레오 100g
    녹인 무염버터 40g
    크림치즈 200g
    설탕 50g
    플레인 요거트 35g
    레몬즙 5g
    판젤라틴 5g
    휘핑한 생크림 120g
    블루베리 퓌레 65g
    블루베리 퓌레 100g
    생크림 50g
    판젤라틴 2g
    ▶레시피
    1. 냄비에 블루베리와 설탕을 넣고 졸이다가 레몬즙을 넣고 걸쭉해질 때까지 끓인 뒤 식혀 믹서기에 부드럽게 갈아준다.
    2. 부순 오레오와 녹인 버터를 섞어 틀에 넣고 꾹꾹 눌러 평평히 한 뒤 냉장실에 넣어둔다.
    3. 크림치즈를 부드럽게 풀고 설탕을 넣고 섞는다.
    4. 플레인 요거트, 레몬즙을 넣고 섞은 뒤 찬물에 10분 이상 불린 판젤라틴을 전자레인지에 10초 정도 돌려 완전히 녹여 반죽에 넣고 섞는다.
    5. 묽게 휘핑한 생크림을 넣고 섞은 뒤 틀에 1/2 정도 붓는다.
    6. 블루베리 퓌레를 짤주머니를 이용해 짜고 남은 반죽을 모두 붓고 퓌레를 짜고 젓가락을 이용해 살짝 섞은 뒤 냉장실에서 30분 정도 굳힌다.
    7. 블루베리 퓌레와 생크림을 섞고 녹인 판젤라틴을 넣고 섞어 틀에 붓고 평평히 한 뒤 냉장실에서 3~4시간 정도 굳힌다.

    40g Melted unsalted butter
    200g Cream cheese
    50g Sugar
    35g Plain Yogurt

    I tried the recipe with half blueberry and half raspberry it is soooo tasty!! Not too sweet and the lemon juice and yogurt really makes the cake taste so fresh!!
    I failed few times and found out some tricky area that will easily lead to failure, some tips for you:
    1. When you soften the cream cheese, it is so difficult to just soften it by room temperature, i need to microwave for 10 seconds few rounds to get that smooth consistency
    2. Gelatin!!!! better to use gelatin sheet, and dont microwave it, it is so difficult to control. I cut it into small pieces and soak in COLD water one by one. And take it out, and place that gelatin bowl in a bowl with hot water to melt it. When you do it right, it will look watery without CRUMBS! When it is ready, pour QUICKLY to your cheesecake batter and mix QUICKLY.
    3. The berries puree between cheesecake batter. Must spread it out very evenly, if you do a big drop in a single area, when you slice your cake, it is like there is a giant water layer between the 2 cheesecake layer, and the top of the cake may fall off.
    4. The berries topping! Once you add the gelatin, pour it QUICKLY!!!!! in the CENTRE!!! or else the layer will not look as tidy. (imagine when it start to harden, it will not spread across the whole surface and will look so ugly.

    1. Berries Puree
    🍓 200g Berries (I use 100g Blueberry 100g Raspberry)
    🧊 60g Sugar
    🍋 5g Lemon Juice
    👀 What you need to do:
    Step 1: Cook in low heat add in all 3 ingredients
    Step 2: After it thickens up, let it cool, and blend in blender till smooth
    2. Biscuit Base
    🍪 100g Crushed Digestive Biscuit
    🧈 40g Butter
    🍶 Few drops of Hazelnut Oil (Optional)
    👀 What you need to do:
    Step 1: Melt your butter and add in crushed biscuit
    Step 2: Pour in the mixture in the mold and flatten it
    3. Cheesecake Batter
    🧀 200g Cream Cheese
    🧊 50g Sugar
    🥛 35g Plain Yogurt
    🍋 5g Lemon Juice
    🍮 5g Gelatin Sheet
    🍶 120g Whipping Cream
    🍓 65g Berries Purée that u just made
    👀 What you need to do:
    Step 1: Soften the cream cheese! Very important or else your batter will be lumpy. If it’s too cold u can microwave 10 second for few rounds. I found that just by putting it in room temperature is quite difficult to soften it up. Microwave is the best LOL (but dont microwave too long).
    Step 2: Add in sugar, yogurt and lemon juice
    Step 3: Lightly whip the cream
    Step 4: Cut your gelatin sheet small, soak in cold water 1 by 1!
    Step 5: Take your gelatin out, put the gelatin bowl in a bowl with hot water. DONT put your gelatin directly in hot water. This part is soooo important, it determines whether your cake will fail or not. I dont recommend using microwave, because it is quite difficult to control the gelatin consistency.
    Step 6: Quickly pour the melted gelatin in cheesecake batter and mix quickly
    Step 7: Fold in the whipping cream in your cheesecake batter slowly
    Step 8: Pour half of your cheesecake batter in the mold
    Step 9: Pour the berries puree in the mold. Better if you spread it evenly around the whole cake, I found that if you do it like me which is spread all around the centre, it will be difficult when you slice the cake as if there is a watery layer in the middle so the top of the cake may separate / fall off easily
    Step 10: Pour the rest of the batter to cover up the berries puree
    Step 11: Put in freezer for 30 mins
    4. Berries Topping
    🍓100g Berries Puree
    🥛 50g Whipping cream
    🍮 2g Gelatin Sheet
    👀 What you need to do:
    Step 1: Pour the cream (no need to whip it) in the puree
    Step 2: Melt the gelatin (like before) and pour in the puree mixture
    Step 3: Pour to the mold. Best to directly pour from the middle then the layer will appear smoother
    Step 4: Freeze 3-4 hours, and take the cake out (use warm tower to wrap it to let it get off easier, you can also user hair dryer LOL)
    Step 5: Decorate with fresh berries! (my favourite part)

    Cooking instructions in English
    - I used google translate so I am not 100% sure if this is correct translation but it gives a good picture of what to do
    1. Put blueberries and sugar in a pan, boil it, add lemon juice, boil until thick, then cool it gently in a blender.
    2. Mix the crushed Oreo and melted butter into the mold, press it firmly, and place it in the fridge.
    3. Gently loosen cream cheese, add sugar and mix.
    4. Add plain yogurt and lemon juice, mix the plate gelatin for 10 minutes in cold water for 10 seconds in a microwave oven and mix thoroughly.
    5. Add a whipped cream and mix, then pour into the mold about 1/2.
    6. Pour the blueberry puree into a bag, pour all the remaining dough, squeeze the puree, mix with chopsticks, and let it cool in the fridge for about 30 minutes.
    7. Mix the blueberry puree and fresh cream and mix the melted plate gelatin. Pour it into the mold and flatten it. Then, let it harden for 3 ~ 4 hours in the fridge.

    I just made this today and it was amazing!!!! Easier than I thought too. Mt mold size was a bit larger though so it was a little shorter. I will make it agaim for sure. Cant wait to try more recipes. So far I've made this one, the honeycomb cheesecake, and the peach mouse cake. All came out amazingly

    I tried this recipe but I used gelatin sheet instead, 3 sheets for the main part and 1 sheet for the top layer and it was amazing! Pretty color and taste were just delish! I used fresh blueberries and 250 cream cheese. It turned out the cake weighed almost 3 pounds while I used just 6-inch mold, pretty heavy but I managed to finish the cake by myself anyway.

      TheLady yes! I did 2 extra things though - added a layer of melted white chocolate after setting the crust and added melted white chocolate to the cream cheese mixture.
      The cake was gone in minutes.

      PhineaBlue the ring using is key to make them. Called a cake ring that's how they get look even use it to cut thin sheets if cake then stack back into the ring and place cheese cake filling and set in the fridge.

      The gelatin really helps making it look so pretty. Too bad gelatin (is disgusting and) not suitable for vegetarians. I would like to see a video using agar agar or another substitute 🤷🏻‍♀️

    Tried this just today and it was a big hit! Baked cheesecakes tends make me feel full with a few bites, but with this one...it's light in the mouth and the sweetness is perfect. The lemon juice was a great contrast with the sweetness and creaminess. It's perfect!
    The only thing that was dissappointing was that I Didn't expect it to be a small cake. Next time I'll just double the ingredients. ✨✨✨

      Isabel Santiago, powdered gelatins are fine. I also used it since I couldn't find any gelatin sheets in my area. 😊
