- My husband requested a specific meal at the last minute and I was able to get it done in under an hour! Chicken Parm, a big salad, and the most delicious French loaf that only takes 45 minutes from start to finish!

45 Minute French Bread Recipe
- 1 cup warm water
- 1 T instant yeast
- 1 T sugar
- 1 t salt
- 1 T butter
- 3 cups AP flour
Add everything to a mixing bowl and mix until it comes together, turn out onto a floured surface and knead for 5-7 minutes or so. DO not let it rise. Immediately shape into a french loaf and proof on a cookie sheet in the oven at proof setting. Proofing should only take 20 minutes. Remove the proofed bread from the oven, preheat it to 425 and while its preheating, score the bread. Then brush with an egg white wash and bake for 18 minutes or until the top is golden brown.
Garlic Butter for Garlic Cheese Bread
- 1/2 cup butter
- A few cloves grated garlic
- 1 tsp of salt if butter is not salted
- Handful of freshly chopped parsley
Cut the French loaf in half once it’s cooled and spread the garlic butter over each side. Top with lots of cheese, then bake at 350 for 5-10 minutes until cheese is melted. Turn to broil for 1 minute at the end so cheese is nice and bubble
Chicken Parm
Halve chicken breasts and soak in buttermilk up to 1 whole day before breading and cooking.
Make the breading
- 3 cups flour
- 1 T salt (heaping)
- 1 T pepper
- 1 T onion powder
- 1 T garlic powder
- 1 T smoked paprika
Remove the chicken from the buttermilk and set in a separate dish while you make the wash
Buttermilk Wash
- Reserved buttermilk from soaking chicken
- 1 egg or egg yolk
Whisk and use in the breading process.
For breading the chicken, coat in the breading mixture first, then coat in the buttermilk wash, and then in the breading mixture again. Yes, this is a double coating. And this is the best way to fry chicken! Once chicken is breaded, it's ready to fry.
I usually use lard or tallow for frying, but coconut oil is great as well. Just make sure you have about 3/4” oil in whatever skillet you are using to fry the chicken. Fry with oil at 360F until chicken is golden brown on each side and cooked through.
Once all the chicken is fried, place it on a cookie sheet, top with a bit of sauce and cheese, and bake in the oven for 5 minutes at 350 or until the cheese is melted

A "real" homesteader stays prepared for things just like this. I am not going to rid my pantry of quick yeast or anything else to make myself feel I am a better keeper of the home. The most important thing is you got a home cooked meal on the table.
I keep yeast too because I don't make sourdough. I stay prepared for baking.

I absolutely love the way you love your husband by making meals to his likes. My husband doesnt like vegetables or soup much and i always accommodate for him in one way or another. I noticed how in another video too you do pretty much the same thing I do in thos situations. Its just lovely seeing other women serve their husbands.

I’ve been making sourdough on and off for about 3 years and my husband really dislikes sourdough bread, having to switch more to yeasted breads, learning that home made is always better than store bought and not to beat ourselves up for what works best for your own home:)

I always keep a tiny bit of my discard in the back of my fridge because I had an occasion where fruit flies got into my starter and laid eggs 😩 had to scrap my starter. Thankfully I didn’t have to start over just fed my saved discard and I was good.
That’s such a practical tip! I’ve been meaning to look up dehydrating and storing starter long term as well (just in case!)

Looks absolutely delicious!! I recently did throw my starter out because I had it in the fridge for 3 or 4 weeks unfed..I opened it and it smelled like acetone.. so I just figured that was not good lol. 😅

Man i wish i had the time. Working a job is such an interruption to being a wife and mother and the responsibilities of taking care of your family. Ur so lucky.
I worked a very stressful job with odd hours right up until our fourth was born and totally agree with you, it makes like as a wife and a mother very difficult! We are preparing our kids to understand these realities if they are called to marry and make sure mom can be home and they an live on once income 🙏🏼
Can I use this recipe with active yeast, not instant?
How is the sourdough starter going? I threw mine away when it turned pink like that years ago. I read that pink meant a bad bacteria got into it and spoils the whole thing. I'm so interested to hear how it's going now! And I used to be sourdough only, but now I am fine with making sourdough and throwing in when we need an easy bread, bun, or roll recipe. I am grateful that I no long have reactions to homemade wheat products. 😊

Can you also use the water bath canning method to make the marinara sauce? The recipe shows the instructions for pressure canning, but I recalled in one of your videos that acidic foods can be canned in a water bath? Love your channel and all your preparedness advice! :)
