This is how soups and gravy look right out of the fridge. Even if you made it at home, put it in the fridge, it would look the same. Roux based sauces just do that.
I work at Culver’s and the broccoli is probably second day and because of it constantly being on heat it naturally thickens that’s why second day item we add more milk to thin it out

Yeah unfortunately there are a lot of awful and artificial preservatives in Culver's food. The sodium makes it that much worse. I still eat here, but I have to be really choosy about what I get. All of the bread is a no-no. Rye bread is the closest thing they have to natural there.
You'll learn in time to look at things in context. Anything that looks shiny and baggy in a plastic bag with condensed water will look disgusting. Presentation matters.
