    So beautiful to see the respect with which the fish is handled. If we must eat creatures that would rather live, then we need to treat each part of it with the care that Josh Niland certainly does

    Independently very interesting to watch. You can tell a lot about a Chef by the way they handle produce and the way they speak about what they are using. I would have liked to have learnt under someone like Josh back in the day, it would create a different experience and relationship to cooking and food I'd would imagine.

    Excellent fish presentation and clean gutting, you can see how the Master treats fish with care and respect.
    I didn’t like much the video itself, bad angle, music and absence of any cinematic aspect, but that’s not so important :-)

    Hi Josh
    If I had cleaned and washed the fish with seawater thereafter vacuumed and frozen, can it be eaten as sashimi ? Thanks

      I’m not josh but the best/most expensive toro I’ve eaten was held in deep freeze. Freezing can also kill parasites so it could be said that from a health standpoint it’s better to freeze it if you will eat it raw. There’s always going to be two different methods in restaurants unless its an enforced law but I would guarantee the chain sushi shops would use fish that has been frozen to safeguard the business against any retribution from a customer contracting a parasite.

      Yeah seems to be a trend on youtube these days , cool interesting videos and tutorials absolutley destroyed by background music . why oh why , i just dont see the point. Its ok if it is a "documentary" style video then suitable nicely composed background music can actually enhance the documentary , but for this tutorial its just ridiculous 🙄😬🤣
