Helpful info. Too many "um"s in the description. Also "açai" does not have a hard 'c' sound (like a 'k') it’s actually a soft "c" with the "i" pronounced: "uh-sigh-ee."

Pukadog in Poipu is awesome too! Hawaiian hot dogs, not a food truck but definitely worth a try. Oh and locally it's known as 'shave' ice, not 'shaved' ice ;-)
You missed Namaste Indian Food Truck next to Anatta's Thai Food Truck, Which is excellent! I love Anatta's fried rice and their red curry with bamboo shoots btw, But you must try Namaste even if the line is super long (one man operation) but it will be worth it.

We were there for about 10 days! I would definitely recommend trying some food trucks on your next visit, they were fantastic! Do you go often?
