    Stephane I have to compliment you. This is one of the finest youtube channels on French Cooking. I have cooked thousands of meals for family and friends and in catering for private groups.     Thank you for showing your passion. You are the third person to have helped me change my view of French cooking. I always thought it was too fancy, costly and the chef arrogant! My first view change was with Jacque Pepin who was on PBS. He showed real cooking with recipes from his childhood and explanations that were understandable. I also used to watch Rachel Koo's TV shows (sp) when she lived in Paris. If you can cook on a small stove like she did you have skills. :) Then came you! LOL! I like how you go even a step further and demonstrate the basics and reasons why you should do something or not. I have a new respect and realize it is not all bourgeois. You are humble and friendly. Those are great qualities in a teacher.

    I came upon your channel researching a chicken recipe that I had made several times. I'm always experimenting looking for new ideas. The recipe was already good but you explained a few basic extra steps that I knew would make the difference I was looking for. I now use one of your suggestions to start all my soup dishes.     Your channel is a dream come true. I love french food but do not speak the language, so you tube in french does not work for me. Real french food by a french cheff who explain's so well and in English. It doe not get any better. I did not cook any of you recipes yet but have bookmarked so many , my cooking bug picks up in the fall. And one more thing: I love that you are not full of air, a simple guy.     There's so much bad or unpractical information about cooking on CZcams and TV that channels like yours are a breath of fresh air. Yesterday I watched chef Greg Easter's (CookinginRussia) video about Roasted Zander with tomato, fennel, capers and Hollandaise sauce and at the very bottom of the recommendations associated was your Hollandaise video.
    Now I'm binge watching your videos and save a lot of them to my video recipe collection.

    I just found your channel today. I am impressed by your ability to make dishes seem easy to accomplish and your love of cooking comes through. Please do not apologize for your presentation, it looks much more professional than you might think. Your english is excellent even with your french accent...this is much appreciated. Stephane, I believe there is a career on camera if you are willing to go that far. Maybe PBS. In my opinion you are the complete package of knowledge, charm and inspiration...you have my vote.

    I recently found your channel and it sparked memories from when I trained as a commis chef 35 years ago (left the profession after2 years) it has made me want to cook classically as I was trained in the 80’s. French cooking is amazing and you make it look very easy but the proof is always in the eating/taste and depth, especially the sauces! So please do continue to do what you do so well as you have a gift and I am glad you share it with us.

    I recently discovered your channel and the work you're doing really is filling a giant void, on English language CZcams. You explain each step of the process in a way that is easy to understand, but never leaving out any of the more advanced details. Anyone who is not a French food expert can learn from what you're doing, and I hope you keep going for a long time to come. I don't know how you don't have 500k to 1 million subs.     Just found your channel and love French food, but there was never anything on CZcams specifically aimed at French cuisine, and after watching one of your videos I subscribed right away.     Thank you so much for what you do. I love your channel. I'm a fairly good cook, but have been studying cooking more since I retired, especially sauces. I made your Veloute with Sole, and my Wife loved it! Plus, I've come to appreciate the importance of making a great sauce. I now use your Veloute sauce base as my gravy base. So again, thank you for your dedication to your craft. I like the way you show how to do something simply, in a setting that doesn't have every gadget known to mankind.     Chef Stephane, thank you so much for what you do. French cuisine is definitely my favorite of them all, and when I came across your (back then small) channel, I was so happy, because, like you said it yourself, the channel is dedicated to French cuisine only.
    Also, your charisma, the way you explain and behave, certainly kept me here. Nothing over the top, simple and to the point, friendly and charming. It feels like we are spending some time with a friend, which I definitely appreciate. Your connection with your viewers is also important, I, personally, feel very happy when you have answered my comments.
    I have tried some of your recipes and I plan on trying many more, and when I impressed my friends with the recipes I learned from you, I sent you a telepathic "thank you". You are bringing a smile, even if you don't know it.

    Loved this episode. I don't think it's a big deal that you are posting once a week and I hope you don't feel pressured by that. Also I actually love the home made feel of u filming yourself and editing urself etc. it's more intimate and creates a connection with home cooks. Otherwise it's another professionally made intimidating cooking channel. Your attitude toward being a you tuber as a hobby is great and I wish you all the best with ur channel

    Hello Stephane. I came across one of your recipes a while back and have enjoyed watching more of your videos over the past 6 months. I very much relate to people who are self taught and have become more than merely capable in their skills. Your passion and enjoyment for cooking is clear to see and that is what captures an audience. I really like the fact that you are not like a professional chef and that you talk to your audience just like a friend talking to a friend and you demonstrate your recipes as though anyone can try it at home and be successful.     I always have interests in cooking and I love to cook. This is the first channel that I have seen about french cooking and I really like it. One video every week is totally enough as I think and I hope that I can see continuous video uploading, preferably that I can actually cook out of this video. I already like the tomato tart and I am going to make it soon and I already shared that video with my vegetarian friend.

    I’m very happy that I discovered your channel. I appreciate both your passion and how you show your own process of learning. Also, I agree with you that French cooking has become less popular when compared, for example, with Italian food. You hear all the time about the regional dishes of Italy - which are wonderful - but the regional cuisine of France is absolutely amazing and varied and I am glad that you are giving this wonderful cuisine it’s due.

    Been with you from the start...love your channel. You are very personable, knowledgeable and charismatic. ☺️. And the "real" French accent is so easy on the ears. I am Canadian - our French accent is very different.
    Keep up the wonderful work...you have inspired me to dig out my Julia Child and Escoffier books and go back to basics.

      Of course, charisma is a matter of both quality and quantity - what you express and how many people appreciate it. You are very personable, I thought you were a formally trained chef because of your confident manner. I started home cooking when I was thirteen to help my mom cook for the family - I was the eldest of five children.

    Bonsoir Stéphane, first of all thank you for your videos. For something as complicated as french cuisine your videos are very encouraging and easy to follow. Secondly, I like your style of presentation: calm, relax, easy, not in a hurry.. it's quite different from chefs who overwhelms you by just watching them do bam! bam! bam!     Love this channel. Have had a great time learning the mother sauces and some of the traditional rustic dishes. I'll confess I am really looking forward to your take on cassoulet. Probably a series of videos. Keep up the good work!

      Rooster Davis the cassoulet should not be under estimated. I am going to France this summer and I will visit a friend of mine who is an actual chef and makes one of the best cassoulet in his region. I intend to do a special video cooking with him so we can all learn how to make a real cassoulet 😀😋

      Bram Baarslag hi there that's a good point. I always wonder. How far or complicated do you think people are prepared to go when it comes to experiencing foreign cooking. I mean in term of time investment and complexity?

      You can go quite complicated if I see what the result should be and how it's done (like béarnaise sauce). But at the other hand, make as little steps as necessary and also use as less tools or pans as possible. People got to do the dishes too and when a recipes calls for the use of too many tools to use (and make dirty) I might skip. Maybe try to come up with smart tricks that reduces cooking steps?
