FRAISIER BY FRED
Serves 6
INGREDIENTS
FOR GENOISE CAKE:
4 eggs
120g (4.23 ounces) of granulated sugar
120g (4.23 ounces) of Type 55 Flour (All-Purpose Flour)
Whisk with a hand whisk over a bain-marie. The mixture must heat up to reach a uniform temperature of 60/65 degrees Celsius (140-145 F) without exceeding 80 degrees Celsius (176F).
Finish beating with an electronic mixer until completely cooled. The mixture should double in volume. Incorporate the sifted flour gently using a spatula, folding in the flour gently. Spread the mixture out on a baking sheet lined with parchment paper. Bake at 175C (350F) for about 15 minutes. Allow to cool.
FOR THE CREME MOUSSELINE:
250g of milk (8.8 ounces)
85g (3 ounces sugar) granulated sugar
50g egg yolks (roughly 2-3 yolks depending upon size of the egg)
35g (1/3 cup) of cornstarch
125g (8.45 Tablespoons) softened butter
1 vanilla bean
METHOD:
Whisk together the egg yolks, cornstarch and a splash of milk (reserve the rest for the pot)
In a medium-sized pot heat the milk, sugar and the vanilla bean paste until simmering, then slowly add the hot milk into the egg yolk mixture, whisking to combine. Then transfer it back into the pot, and heat on medium, whisking all the while until thickened. Allow to cool to room temperature before adding the butter.
Tips For the mousseline cream: when you incorporate the softened butter into the cooled cream, the two mixtures must be at the same temperature (room temperature). Thus the mixture will be done perfectly.
Add the softened room temperature butter, to the cooled pastry cream, and mix with an electric mixture for 2-3 minutes until light and fluffy. Set aside.
FOR CHANTILLY (Homemade whipped Cream)
2 cups (240ml) of heavy cream (creme entiere)
1 Tablespoon (8g) powdered sugar
1 teaspoon (5ml) of vanilla extract
METHOD:
Combine all ingredients in an electric mixer and whip on high until stiff peaks form.
TO ASSEMBLE:
800 grams (28 ounces) of strawberries
Whipped Cream (recipe above)
Whole Strawberries, cut in half with green tops intact (8-10)
Brisures de pralines rose or any other candied decoration
METHOD:
Cut out 2 circles of the cooled genoise cake with an 8-inch cake ring and set aside.
Place the 8-inch cake ring on top of cake board or cake stand. Fit the plastic cake collar inside, fasten with tape.
Slice the strawberries on the bottom to level them so they stand upright, assuring that each strawberry is roughly the same height. Then slice them in half, vertically.
Place the strawberries inside the cake ring, cut side facing out, all along the perimeter of the cake ring. Then place the genoise cake disk inside as a first layer.
Transfer the creme mouselike into a pastry bag fitted with a round tip. Pipe the cream in-between each strawberry, filling any gaps. Then pipe concentric rings of creme on the bottom, covering the cake. Add a layer of sliced strawberries, then another cake disk. Then another layer of piped concentric circles of creme, and more strawberries, and a final layer of creme.
Smooth off the top layer of creme with an offset spatula. Cover with plastic wrap and refrigerate for a minimum of 4 hours or overnight.
TO DECORATE: Transfer the whipped cream into a pastry bag fitted with a large star tip. Pipe dollops of star mounds on top of the cake, covering the surface. Slice strawberries in half, leaving the green tops for decoration and place them on each mound cut side facing up and slightly slanted, all the way around facing the same direction.
Optional: Top with candied rose petals, chocolate decorations, or candied pearls. Keep refrigerated until ready to serve.
To serve. Room the cake ring, and then the cake collar, and slice. - Jak na to + styl
We have pockets of areas in the USA where local growing and attention to detail and support of local growers is thriving but unfortunately the corporatization of our food supply is the core of the problem here. France is a much smaller country with a honorable and stubborn tradition of fighting back against corporatization and globalization of their food chains and I hope they can continue to do so!. Merci Beth for this lovely vlog!
That’s true, some of the local farmers produce are way better than supermarket chains
I could agree with you more. Small farmers, independently owned establishments are all the difference
Shop your local farmers markets for fresh produce! It’s still out there folks! 👨🌾
You are correct in your assessment of our food supply and of the huge differences between the size of our two countries. But is also cost and labour and how it affects the quality and production. I live in South Florida and vast amounts of farming areas have been sold to developers to accommodate the population growth, not only in housing but also infrastructure. With the exception of cranberries, citrus, and pome fruits (apples and pears), almost all other fruits and vegetables that are available in the supermarkets come from Central and South America, where unions are nonexistent and labor is cheap. Another situation is organic farming which uses more water than non-organic farming, but it can not meet the demand. It is about "supply and demand" and growing seasons which makes the quality of the product less than one would like. But I can not forget to say that PASSION is also involved and just as important, the French are known for their passion for presenting a quality end product as Beth pointed out.
Farmers markets in France are organized by the cities. In most cities, you can find affordable high quality local food (produce, bread, cheese...). In the US a lot of the farmers markets are organized by private companies (like event organizers) who do that for profit. The booth fee can be so high and what's supposed to be a farmers market ends up being a fancy gathering of some farmers and crafters, where regular people can't afford anything.
This is why I love France 🇫🇷! Thank you for taking us to see this artist. It’s true what you said about how the French do things. Thank god for them. Making the world a better place. You are such a lucky girl Beth and I feel lucky getting to see your videos. Thank you. How sweet of your husband to bring you the chocolate rooster!
Aww yes it was such a sweet surprise! The girls and I gobbled them all up! I had never seen anything so beautiful!
I love the food in France! The little details that go into it, and the passion to make everything look so beautiful too.⚜️
Soo true!! And its always so inspiring!!
These French tidbits are so very educational and delightful.
I'm so glad you enjoy them! Always such fun to share! :)
BETH never disappoints wether it's a delicious recipe from her Cali kitchen or when giving us an incredible peak into a true French food artisan like Frederique! Just beautiful and wonderful that taste was not sacrificed for the beauty of the strawberry! I don't think I could master the Fraisier but it will certainly be on my list the next trip across the pond. Merci Beth!
Aww I'm so glad you enjoyed it! It was such a wonderful visit, and I was so happy I could share it all with you! And that cake tasted as good as it looked!! Just amazing!
How amazing! ❤ That is so generous of Chef Fred to give you his time to take you to the berry growers and to share the recipe and process for creating a beautiful Fraisier! 🍓 🍰

Ooh that is so good on the back … that’s why I luv raised gardens … ooh that is so smart to flatten the bean first
Absolutely beautiful and glamorous as always, Beth.
I have the best memories of the desserts and pastries in France. It's a wonderful aspect of their culture.
It really is! Such a sight to behold!!
I have made this cake many times over the years but only I make it gluten free due to Celiac. It’s always such a beautiful and refreshing dessert to serve. The people of France seem to be so friendly and hospitable. It was so enjoyable to watch this chef in action. Great video.
Thank you, Beth. You show us the most interesting places and people! And I include you and your family in the interesting people!
LOL! Oh yes they can be an interesting bunch too! Ha!! So glad you enjoyed!

LOL I meant interesting in that they are intelligent with good senses of humor, always doing new things and learning, and have things to say that are worth listening to! Not the other kind of interesting! 🤣🤣
I have made Fraisier before and it was so delicious ! But I learned some tips from how he makes it and I am gonna give it a try again ! Thanks Beth ! This is such a treat !! Another awesome video!! And thank you for taking me to France again this summer!!
So glad you liked it! Yes it's a fun way to travel (without the jet lag ha!) Such fun to have you all along for the ride!
A beautiful creation, no skimping on fresh, authentic ingredients! Incidently, bakers always weigh all ingredients including liquids for more accurate measurements as per my baker son.
This was so much fun. I most definitely will try this next spring when I can get some fresh strawberries. Thank you for your beautiful videos!
Yes it would be a lovely springtime dessert! I think I'd like to attempt it next year for Mother's Day! :)

Omg, I am salivating over this gorgeous cake 😋. This is one of those instances where it looks as good as it tastes. Beth, I just love this series 🇫🇷
Ha! Oh it tasted even better!! If you can imagine?!
Oh Beth, I do not even have the mildest talent to make that gorgeous cake. I am so jealous that I'm not there to see Fred in person and devour that cake. I think I'd come home at least 20 lbs. heavier after a month in France. Hope your dinner party was a success. What am I saying, of course it was. Duh!
Ha! Oh i know I’m going to have to rein it in and only eat lettuce leaves soon! 🤣🙌💕🇫🇷
Loving your videos from France!
I referenced you today as my inspiration for planting creeping fig.🥰 I hope that’s ok. Your home and gardens in California are beautiful! 🌸🌿
Aww sure of course! Isn’t creeping fig the best?! Such a quick fix!! So glad you are enjoying the French videos! 💕🇫🇷

Hi I've been a watcher for years and your channel keeps improving in video quality. I actually followed some recipes from this channel and it made me enjoy cooking.
Awesome! Thank you! So happy to hear that!! 🙌💕
Incredible!!! Every component looks delicious 😍😍😍
My brother taught me to crack eggs like that when I was young & it has always stuck.
Oh wow! It's such fun to watch! I have to try it! My husband was shocked I had never seen that before ha! :)
@@EntertainingWithBeth
Good luck! I hope you do better than all of my attempts - I just end up with a giant mess!
What a beautiful dessert! 😍
That is the most gorgeous dessert! Wow!
I'm going to Paris in September. Can't wait to try all the delicious food and desserts there!!
Oh yes! Instead of the "City of Lights" it should be called "The City of Treats!" LOL! Enjoy every minute (and calorie!) LOL!
@@EntertainingWithBethI had a great time in Paris even though it was unusually hot for September. They're doing a lot of construction work fot the world rugby festival and for the Olympics. Buses didn't come and Metro was so hot. But hey, Paris will be always Paris!! Will go back after the Olympics when the city gets quiet.
That was so fun to watch! What a beautiful and delicious looking cake :).
Love this Beth thank you I miss this standard and taste of fruit from home but appreciate it so much more when I visit
Amazing recipe tempted to have a go
Beth thank you for sharing this with us. I hope that brought your family a special treat from Fred's. Everything in the display case looks yummy... I'd have to try one of everything . Next trip to France will require a stop at Fred's Paterssarie 😊
I hope so too! It is worth the trip and all the calories! Seriously, the man is a magician! Ha! Just amazing!!
Your French keeps getting better and better! Basically perfect now :) Bien joué!
LOL! Well I have a little way to go ha! But yes it gets better every year! But thank you for the vote of confidence ha! :)
Just love my trips to France with you!!

So wonderful! The beauty of those strawberries, oh my! This was another great vlog Beth thank you! I may try to make it ,but strawberry season has passed here in NY. Looks sooo good !
So glad you enjoyed it! Save it for next year :)
Dear Beth, thank you for such delightful videos!

They were absolutely amazing the berries! I'm wrecked for life now because every strawberry that came after that moment just doesn't compare ha!
Wow! Amazing artistry! Such a passion. I love it. I’m glad you enjoyed the cake!
Oh we did! Every last bite! :) Ha!
Ooooohlalala! C’beau! Beth thank you so much for sharing everything French. This really me makes me want to go catch a flight and enjoy Fred’s patisserie! 💕 Merci Beacoup.💕
Thanks Beth! What a joyful and inspiring video. I also understand now why these cakes are rather pricey - quality ingredients, skill and baked fresh each day. Yummy!
Another great video, Beth! I was thrilled to see the next video is at le Logis de La Chabotterie! My husband’s family homestead farm is literally down the road to the right! Looking forward to that!! A bientôt!
Aww really?! How funny! It’s one of my favorite places to visit!! 🙌💕🇫🇷
Yummy!!!
wonderful! one of my favorite desserts ever! thank you so much for this video! I've learned every single detail to apply later to this recipe! thank again, Beth!
YAY! So glad it was helpful! Keep me posted on your success!!
Thank you for this amazing video, I am so excited to make this. I had a memorable taste of Fraisier in Paris but have been too intimidated to try replicating it. Thanks for breaking it down into steps, and for sharing the recipe. I’m going to give it a shot!
Yes! You should! It doesn't look that bad actually! Let me know how it goes :)
Bravo! Yummmm
Lovely
Thank you, Beth!! I can not say that I will make this Fraisier, it would make me a nervous wreck 😵💫. How wonderful that you took us to the farm, to take a peek at those fantastic berries. I so look forward to your videos since I'm always learning something new and it is nice to see Philippe in your videos along with your little "twin" Aurelie. What an amazing visit to the Bourrine du Bois Juquaud, a simpler time that existed without Wifi and all the technology that we have today. Again THANK YOU for sharing these amazing places. Bisous 😘😘😘😘
You are so welcome! Yes, my little twin Aurelie is still up for an appearance now and then, while my eldest is 17 and not so much ha! LOL! So glad you enjoyed the video! I have a great for us next week, one of my favorite little rustic Manor houses in France. With a dining room, I dream about ha! Stay tuned!!
Wow! Wow! Wow! ❤ beautiful thank you for sharing!! Now i cannot wait for summer to go strawberry picking and making this!!!
It has been on my bucket list for YEARS, but it always seemed so daunting.
Frederic made it look so easy and elegant! Im saving for October / November!! 😂
He really did!! I'm so glad it inspired you to try it! Keep me posted and let me know how it goes! :)
What a delight to visit both the strawberry farm and the patisserie kitchen, 🥳 ThankYou for the recipe and the many tips, 🍓 🎂, 🇫🇷 💚💚💚🍀
My pleasure! So glad you enjoyed it! :)
Just stunned. On to attempt this one fantastic cake / torte as soon as there are some excellent strawberries in my vicinty... probably next year. Oh! I will even go to such unheard of lengths as to plant and care for said strawberries myself... anything for just one of these beauties... Thank you, Beth! This is pure inspiration!
Ha! Yes those strawberries made that cake sing! They were incredible!! So glad you enjoyed!!
wonderful
Omg love this France has thee best ever
Wow, what a delightful cake and experience in France! It’s my husbands birthday this month (this first of us being husband and wife), I’m tempted to create this cake for him as he loves strawberries! I think it may be worth the try! Thank you Beth! 😊
Oh you should! That would be so lovely! It would make a fantastic Birthday Cake!!
quelle merveille!!!
thiss isss deliciousssss
Such gorgeous fruit! He is quite the artist! Thanks for sharing and I look forward to seeing the chateau :)
Oh yes that Château is one of my favorite little spots! The interiors (which you will see!) are completely recreated as it was, you have the sense of people in someone's private home that just stepped out! And the garden is fantastic too!
I just made it 😊 I’m having special dinner guests tonight and I had bought strawberries to serve strawberries and cream as dessert but this obviously looked waaaay fancier so I made it and I can’t wait to cut into it tonight. I hope it sets in time.
Quick note though, I think you meant 175C (350F) oven temp. I had the cake layer batter in for 15 mins at 175F and it was nowhere near done. I cranked the heat up to 350 for another 10 mins and it was done.
OH YAY! Lorena I can’t believe you made it so last minute you’re amazing!! 🤣🇫🇷🙌💕 and yes just fixed the temp so sorry about that!! Let me know what you think!! Hope you all enjoy! HAPPY SUMMER!!
Would love to see photo of YOURS!!
@@EntertainingWithBeth It was delicious and my guests raved about it! I'll definitely be making it again and for next time I will get a disposable piping bag. My reusable one is absolutely terrible to work with.
Ha!! Awww I’m so glad it was a hit! I’ll be sure to tell Fred ha ha ha!
Just thanks!
This was fun. Now I am starved.
Ha! Yes these videos have that effect ha! :)
The fraisier looked amazing. I'm surprised nobody has picked on the fact that Frédéric found Frédérique. 🤣😂 My aunt's best friend's name is Claude and so is her husband's. 😁 I grew up calling him Dédé and only learnt his actual name when they came to visit the US. Dédé hated American food, he tried some American birthday cake and was scandalized, he tossed it aside, calling it "étouffe-chrétien". 😁 I agree with him, pastries here are just a shortcut for diabetes.
Ha! Yes my husband thought the same thing when we would go to the kid's Bday parties here in the states and the parents would bring out these cakes loaded with frosting and food coloring and wonder "Why don't Americans have good cakes?!" I'd always laugh and say "but the kids love these types of cakes!" LOL!
We DO have amazing berries in the US. But you have to know where to get them...certainly not in a grocery store! The Pacific Northwest has delicious berries in early June. They are sweet, red all the way through, beautiful, and taste like strawberries. Come to Portland (Oregon) in the spring for some "real" strawberries! You want to try "Hood" berries (grown right here next to Mt Hood).
Oh yes that does sound lovely! Would love to try those! And funny enough I live in California! You'd think here I'd be able to get a decent strawberry here?! But none are as good as the ones I've had in France!
Tanaka Farms in Orange County has some amazing strawberries. Worth the drive
Nice! I'll remember that one! Thanks for sharing!!
WOW so beautiful and I'm sure delicious!
It was! Incredibly good!!
Those berries look so beautiful and juicy . Love your adventures in France
The berries were phenomenal! They tasted like strawberry-flavored lollipops! I've never tasted anything "natural" that almost tasted artificial because the flavor was so sweet and pronounced! It was so weird!
Hello Beth.
Is it possible to have him saw us How he makes
The pie ?? That looks like roses 🌹
It looked amazing 👏 😍
Thank you.
I think one of the reasons why you would find American berries less flavorfull is that people in the US would typically put them in the fridge. The cold really ruins the flavor in fruit, especially berries. You have to leave them at room temperature. Same goes for tomatoes. Of course, that implies you have to buy them and eat them right away...
That plus the fact they are picked when not quite ripe and then they spend days traveling to other parts of the country. The strawberries and blueberries that we pick fresh here are delicious! So full of flavor and, of course, perfectly ripe. They are quite early here and followed by peaches that melt in your mouth. It makes such a huge difference!
You are so beautiful Beth! I love what you do!!😍😍😍
Aww you are too kind :). I'm so glad you enjoy it! Always such a joy to share my adventures! :)
@@EntertainingWithBeth I am watching you from Iran by the way! Keep being sweet and entertaining 😍

Thank you for another great vlog. How long have you spoken French? Are your children bi-lingual? How did you meet your husband? Would love to know.
Oh me and my French ha! What a journey it has been! I've been at it for about 20 years (NO ONE in my husband's family speaks a word of English, so that really was the best way to learn!) And yes the kids were raised bi-lingual; because I just couldn't put them through what I went through to learn ha! You can learn more about that and how I met my husband in this video :) czcams.com/video/3mvYa8BJ7to/video.html
