  • Located in West Haraz, the Al-Khanshali I Estate is the premiere farm operated by Mokhtar Alkhanshali. After eight years of extensive work within Yemen, Mokhtar-founder of Port of Mokha and the subject of Dave Eggers' 2018 NYT Best Seller 'The Monk of Mokha,' chose to launch his inaugural farm project with this anaerobic processed micro-lot. With the guiding hand of Wilford Lamastus, this Jaadi variety was fermented for six days in a sealed tank, which has transformed the flavor profile into something extraordinary. Expect notes of intense fruit like passion fruit, followed by the winey complexity of umeshu, a Japanese plum wine.

    Isn't 15 gr coffee to 250 gr water a 16.66:1 ratio?

This was fun to you 2 discussing how this collaboration came about. Mine came in the mail today and I can’t wait to try it. I’m really excited about the bubble gum flavor. Thanks for always posting Brew guides.
