Obviously not, and obviously sushi tacos require different measurements and cooking techniques, hence the obvious difference in sizes. Why TF would you watch her videos if you're gonna hate on her?
I tried this recipe and a single piece of nori dipped on one side did not work. In this video once I watched it back after failing it looks as if you dipped a whole sheet on both sides then stuck a clean sheet to it, right?

The egg for tempura batter was a mistake. Try a simple mix of 2:1 ratio of flour and cornflour with plain water next time with a tsp of b.p next time
I think eel sauce is made with alcohol (mirin), something to keep in mind.
