    2 Cups Cubed Ham
    8 Ounces Shredded Cheese
    10 to 12 Ounce Riced Cauliflower
    1/2 Cup Chicken Broth
    2/3 Cup Heavy Cream
    1/4 Red Bell Pepper (about 1/2 cup)
    1/2 Cup Peas and Carrots
    2 Tablespoons Soy Sauce
    Salt and Pepper to Taste

    I appreciate the inspiration. I've fixed this for my 85 yo father-in-law a few times now tweaking add ins according to what I have in the frig.. He loves it. Thank you.

      You are so welcome. I was so happy to "discover" riced cauliflower. I like cauliflower, but eating it several times a week was making me sick of it. Using the riced version really allows so many good things.

    We got some end pieces from deli ham that are in the freezer. This recipe may work well. I'm trying to use up things in our pantry and freezer.

    Btw I used cauliflower in my mashed potatoes nobody even noticed 👍

      In my childhood it was common to bulk out mashed potato with swede. There is a flovour change with swede (not an unpleasnat one) but I expect cauliflower would not. May try that.

      I have a theory that we have eaten so much processed food and "food-like products" for so many years we have forgotten what real food tastes like.

    I have never understood the addition of Cheese and Cream to this type of dish. I love cheese but why add it to a casserole? Up to the addition of the cheese thisa looked delicious, at leat you didm't add rice, oh well I supposed you did with the cauliflower rice and I have no idea what that tastes like. I would do this recipe but stop before the cheese and cream/milk. I am diabetic but I would prefer the hit from pasta to the cheese.

      Your kitchen, your rules, but if you notice, the whole point of the video was to make a creamy casserole without using canned soup, while keeping it low carb. BTW, they is NO comparison to the "hit" between pasta and cheese. Of course the title to the video is Cheesy Ham Casserole, so the addition of cheese was no surprise. The beauty of cooking from scratch is that you can make it the way you want it.

      Of course, Cheese and Ham is a given like Cheese and Apple I think it may have been the milk/cream which turned me. I suppose it is a matter of(styles is the wrong word) but I recently followed a recipe for Chicken and Rice, that also included cheese. and I found out I did not like chicken and rice - not cooked together anyway so I don't do chicken and Rice. btw I have no rules in my kitchen I rely upon people like you to give me ideas about what to cook and I am grateful for your content.
