I'm yet to see that as a reality.
This guy carries an unbelievably peak FOMO vibe maybe because of his success relative to at such a young age although he is humble in talking.
Those who are feeling like they've done nothing, please do not compare yourselves to him, learn the important things that apply in your life and progress in your own game.
Remember that, when we all die, all of us, him, Ambani and the street beggar take absolutely 0 money to our next lives.
Thats what i would say for him. But couldn’t find words. And he tries to sound mature and experienced which he is not. I would say.

Right now, I am builing a full stack web app for peer-to-peer money lending and borrowing with payment gateway integrated and user authetication and user profile.. all these features.. is it cool enough to call this project one of such extreme projects for the portfolio?
If it's your first project, then you're on the right track
As far as I understood, a good/extreme developer profile would be where you're building something which is useful and not just like a clone of existing apps.
Also make sure you're building it from scratch using the latest technologies.

when a company hires remotely from India probably they are looking for cheaper employees! and most of the companies are looking for EU based candidates someone from India will require work permit.

Yes it is, but it'll be a bit more difficult, your github profile acts like your portfolio when it comes to applying to these remote jobs
