Czech Open-Faced Sandwiches & Linzer Cookies

  • These are some more Czech dishes to try :D
    OPEN-FACED SANDWICHES (OBLOŽENÉ CHLEBÍČKY):
    Diagonally slice a long baguette.
    POTATO SALAD:
    (there may be leftovers)
    -place five Russet potatoes in a pot of cool water (just enough water to cover them)
    -cook on high with the lid on until the water begins to boil, then leave the lid slightly uncovered and lower the flame (but make sure that the potatoes are still boiling)
    -check the potatoes after 15 minutes: poke them to make sure that they aren’t too hard or too soft because they still need to be firm enough to be cut into small cubes (if the potatoes aren’t the same size, then some may be done sooner)
    -cook for approximately seven more minutes
    -use tongs to place the potatoes on the countertop to cool before peeling
    -peel the potatoes with a small knife and cut them into small cubes
    -cut three whole, medium-sized pickles into small pieces
    -place six eggs in a pot of cool water (again, cook on high with the lid on until the water begins to boil and then lower the flame once the water begins to boil; leave the lid on) and hard boil for 10 minutes
    -drain the water, fill the pot with cold water and ice cubes for easier peeling
    -set two eggs aside and cut the rest of the eggs into small pieces
    -steam half a bag of green peas for five minutes (let the water in the bottom pot being boiling first before placing the peas in the top pot)
    -roll a few slices of ham and cut into small pieces
    -cut a quarter of a large, white onion into small pieces
    -place the potato cubes into a large bowl
    -salt and pepper to taste
    -add mayonnaise as soon as possible to prevent the potatoes from turning gray (but add the mayonnaise gradually, to your preference)
    -add a bit of Dijon mustard
    -add the rest of the ingredients into the bowl: pickles, green peas, eggs, ham, and onion pieces
    -mix well
    SANDWICH TOPPINGS:
    1. scoop of potato salad (as described above)
    2. slice of hard-boiled egg
    3. dash of paprika
    4. piece of cheese
    5. piece of sardine
    6. lemon wedge garnish
    7. slice of radish
    8. piece of tomato
    9. rolled piece of ham
    10. rolled piece of salami
    11. finely grated cheese
    12. slice of bell pepper
    13. final parsley garnish
    Arrange the sandwiches neatly on a serving platter.
    LINZER COOKIES (LINECKÉ KOLÁČKY):
    Mix in a large bowl:
    -9 oz of all-purpose flour
    -3.5 oz of powdered sugar
    -finely grated lemon zest (1-2 lemons)
    -5.5 oz of softened, unsalted butter
    -two egg yolks
    -knead the dough thoroughly with your hands
    -shape the dough into a ball, cover it with aluminum foil, and let it rest in the refrigerator for 30 minutes
    -cover your board with flour and roll out the dough into a thin sheet
    With regards to thickness, keep in mind that the final cookie will be two sandwiched layers with jam in the middle. It may be a process of trial and error to roll out the desired dough thickness.
    -use cookie cutters of your choice to fill one full tray of solid shapes and one full matching tray of the same shapes, but with cut out centers (carefully slide a dull, thin knife under the dough to help you move your cookies onto the baking trays)
    It is not necessary to grease your baking trays because there is enough butter in the dough itself.
    -preheat the oven to 325º F
    -bake the cookies for 12 minutes
    -allow the cookies to cool
    -cover the solid shapes (the side that was facing down on the tray) with your choice of jam(s)
    -use a sifter to sprinkle the cut out shapes (the side that was facing up on the tray) with powdered sugar
    -paste the two halves of each cookie together and
    Arrange the cookies nicely on a serving platter.
