Ingredients:
1 can condensed milk
2 teaspoons of unsalted butter; 1 teaspoon of unsalted butter to roll coconut balls
3 tablespoons of 18% cream
1 cup unsweetened coconut; additional 1/2 cup of unsweetened coconut to roll coconut balls.
Directions:
In a medium sauce pan place 18% cream, butter, and condensed milk. Continuously stir until butter melts; add 1 cup of unsweetened coconut and continue stirring for approximately 8 minutes or until mixture thickens. Transfer to a Pyrex dish and spread evenly; cover with plastic wrap and refrigerate for 1 hour (can also be refrigerated overnight).
Rub hands with butter, so the dough does not stick. Scoop dough with a teaspoon and roll into small coconut balls. Roll coconut balls in unsweetened coconut flakes and place in mini cupcake liners.
