Bhaja Recipes Mrunalinee | Vegetable Fry Recipes : Here we will prepare 4 types of easy and delicious Odia foods which are Diabetic friendly too . Vegetables are used in tehse 4 types of Bhaja are Raw Papaya , Pointed Gourd, Bitter Gourd & Brinjal . So, Diabetic patients could also easily enjoy these 4 types of Bhaja ( fry recipes ) . We Odias love to consume these Bhaja / Fry dishes especially with Pakhala ( Water Rice ) or can also be enjoyed with plain steamed Rice in lunch , Dinner .

Ingredients :
- For Raw Papaya Masala Fry Reicpe :
1. Raw Papaya ( Amruta bhanda / Bhanda )
2. For masala paste ( Onion - 1 big + Ginger - 2 inch + Galic 7-8 cloves + Cinnamon / dalchini - 1 inch + Green Cardamom / Gujurati - 1 pod + cumin seeds / Jeera - 1/4 tbsp + Black Pepper corn / Golmaricha - 1/4 tbsp )
3. Turmeric powder ( Haladi gunda ) - 1/2 tbsp
4. Kashmiri Red chilli powder ( Lanka gunda ) - 1/2 tbsp
5. Meat masala ( veg ) or take Garam masala instead of it - 1/2 tbsp
6. Salt ( Luna ) as per taste
7. Sugar ( Chini ) - 1/4 tbsp ( Optional )
8. Dry Fenugreek leaves ( Kasuri methi ) - 1/2 tbsp
9. Mustard Oil ( Sorisa tela ) - 2 tbsp ( or as required )
- For Pointed Gourd Fritters ( Potala pakudi / Parwal Pakoda ) Recipe :
1. Chopped Pointed Gourd ( Parwal / Potala ) - 4
2. Chopped Onion - 1 big
3. Grated / Crushed Ginger - 2 inch
4. Chopped Green Chilli - 3 pcs ( or as required )
5. Gram flour ( Besana ) 8-9 tbsp ( or as required )
6. Turmeric powder - 1/2 tbsp
7. kashmiri red chilli powder - 1/2 tbsp
8. Dry Fenugreek leaves
9. Cumin seeds - 1/4 tbsp
10. Salt to taste
11. Crushed Garlic 7 - 8 cloves
12. Soda - 1 pinch
13. Oil to fry
- For Bitter Gourd gram flour Fry ( Kalara Besana Bhaja / Karela Besan Fry ) :
1. Bitter Gourd ( Karela / Kalara ) - 4 pcs small
2. Crushed Ginger - 2 inch
3. Crushed Green Chilli - 2 pcs ( or as required )
4. Chaat masala - 1/4 tbsp
5. Salt to taste
6. Gram flour ( Besana / Besan ) - 3 tbsp ( or as required )
7. Oil ( as required )
- For Crispy Brinjal Semolina Fry ( Baigana suji Bhaja / Baingan Sooji Fry ) :
1. Brinjal ( Baingan / Baigana )
2. Crushed ( Ginger - 2 inch + Garlic 2 - 3 cloves only )
3. Turmeric powder - 1/4 tbsp
4. Kashmiri red chilli powder - 1/4 tbsp
5. Garam masala - 1/4 tbsp
6. Chaat masala - 1/4 tbsp
7. Salt to taste
8. Chopped Coriander leaves ( Dhania patra )
9. Refined / Mustard Oil - 2 tbsp ( or as required )
10. Raw Semolina ( Kancha Suji / Sooji ) - 1 bowl
11. Rice flour / Rice powder ( Chaula gunda ) - 3 tbsp ( or 1/4 of semolina )
12. Red Chilli flakes ( sukha lanka gunda ) - 1/2 tbsp ( Optional ) , use kashmiri chilli powder instead of it
13. Salt a little
14. Oil to Fry
