I also struggle with getting through the day when it’s gloomy! (Especially since moving from cal to Ohio) But recently I’ve been doing light therapy. For a basic run down, our internal “clocks” that produce melatonin when it’s time to sleep, are actually set of by light. There are light receptors in our eyes that cross and submit the information to that small part of our brain (about one rice grain!) anyways, when your eye receives light it tell your body to stop producing melatonin and when it starts to get dark it does the opposite. That’s why we can get SAD, in the winter the sun sets sooner and it just tends to be darker throughout so our bodies are just constantly producing a bit of melatonin. Which makes sense to why it’s hard to be productive and motivated on gloomy days! Anyways, light therapy is when you use a 10,000 Lux lamp and it is supposed to help keep that melatonin at bay. You can find them cheap on Amazon, all you have to do is sit in front of it, generally at eye level for 10+ minutes. You don’t have to look into it, it just needs to go into your eyes. For example I’m watching your video on my computer and the light is right next to it. It’s made such a huge difference for me, and might be worth checking out!! It’s super gloomy today, and only 11 for me but I was having a hard time staying awake for my school, but with just ten minutes I’m having no problem. (Typically you need to use it just in the morning, but at least turn it off a few hours before bed so you don’t have issues going to sleep)

Ok in my experience as a former barista, oat milk was the hardest milk to master latte art with because it didn't froth as much or as well as other milks like cow or almond... I don't know if others would agree but if you like almond milk, you could try with that and see if it improves!
Girrrrl I have spent probably 6 months trying to perfect dialing in my espresso and my latte art! I find that for the dialing in, you have to get SUPER fresh beans, must be roasted within the last two weeks. For the latte art, don't introduce air for too long, just in the very beginning and spend the rest of the time introducing the air so below the surface. Hijabs & Aprons is my favorite CZcams channel for learning!

been watching your latte art journey - so funny! you should be swirling the crema on the espresso a lot more before you start to pour the milk (and pour immediately after swirling!) that will help get more even color/distinction from the milk in the design and give you a more even surface to make the art
