Im an experienced baker Chicago based, I worked for Kasama before, You dont need much gluten formation for puff pastry, kaya you have vinegar there to avoid that. dont add extra water too because it tends also to build gluten. Just mix it just enough para macombine all the wet and dry. as you rest it kasi mag bubuild up pa yan ng glutenc. para hnd matigas ung dough, and less resistant pag niroroll out.

1. Sa wrap mo walang crepe kasi kami sa work ko ang turo sa akin para di maging saggy ang pastry mo kailangan my crepe para my sumalo sa liquids sa loob ng wellington.
2. Sa temperature ang ginagawa ko 200 for 10 mins. And. 220 for 30-40 mins (depende sa size na nagawa) mas maganda ung kulay i mean darker color ang labas and perfect ung temperature sa loob.
3. Yung sauce pwede din mushroom sauce pero ako gamit ko salsa foie

Hi Ninong Ry avid fan here. Pinakamahirap talaga lutuin ang beef wellington at marami munang mistake bago mo maperfect lalo na yung pastry bukod sa mahal ang mga ing. Naamazed ako sa mga bali at twist ng recipe mo pra maging pinoy pa din ang lasa and parang ang sarap ng finish product mo ( sana makatikim hehehe ). Napansin ko lng sa resting after kunin sa oven siguro much better sa rack ilagay pra hindi mababad ng sabaw ang pastry sa ilalim para iwas soggy. Pero still looks appetizing pa din naman. Looking forward for more recipe. Btw nice set up ng camp car love it!
