- Pickle is an important accompaniment in most Indian meals.Sometimes, curd and pickle alongwith some rice is enough to make a satisfying meal. But be warned;owing to its high salt and chilli content,it is advised not to consume pickles in large quantities.
In olden days,locally available seasonal fruits or vegetables were pickled using natural preservatives like salt and mustard seeds. Some pickles were preserved for years. Lemon pickle isn't meant to be preserved for a long period of time. Here my mother shares with you a secret recipe for a tasty lemon pickle.It needs only a few commonly available ingredients .Note that artificial preservatives like vinegar etc are not used here.This pickle will surely make you ask for more!
Lime/Lemon pickle is a common dish but this particular recipe using no preservatives by Padmini Antharjanam is a different one with unique taste.
SPECIAL LIME/LEMON PICKLE
INGREDIENTS:
Lime/Lemon - 8 Nos
Red Chilly powder _ 4 Teaspoon
Asafoetida(Fried in ghee and powdered) - 2 Teaspoon full
Sugar - 2 Teaspoon
Salt - 4 Teaspoon / needed
Method:
Fry the lemons in gingelly oil till it turns golden brown. Once it cools, divide them into 2 halves. Add sugar, salt, chilli powder and asafetida powder. Mix well and store in an air tight container for about 2 weeks and use.

Hi mom n son, I am going to make this lime pickle but I have a small doubt, do we have to put uloova, manjal n vinegar or is it not necessary.
In our style our method is the same which shown in this video. No other ingredients to be added more. No need of other preservatives

Quality of the oil and preparation time etc would be factors. Normally we dont have such issues
Please make sure that the lemon is properly roasted and all masala is roasted well. Make sure that the bottle is very clean without moisture and the spoon used too. Common mistake people around wash hands and shake where tiny drops end up in preparation area. Once in bottle, can heat one tablespoon gingelly oil to smoking point and pour over the pickle. Close only when cool.Then no pooppal.

Sir. I was advised not to use any metal without tinning (kalai) or iron utensils for making salty spicy and sour taste dishes as these food has capacity of make the metal leach into the food. I tried once and the food became more metal taste.
Sarala S no sarla u r mistaken always use iron even the receipe had metal still it is healthy the reason y am saying is that its ayurvedic medicine avoid plastic frying pa etc even that iron reaches inside it doesnt lead to led rather it imcreases blood in our bodyso in ancient times and now doctors esp ayurvedic doctors prescribes this just keep it in mind
