Filling and wrapping the chocolate cake with ganache

- The amazing chocolate cake stuffed and covered with ganache, moist and fragile at its best, consisting of layers of sponge cake
Rich in coffee flavor, chocolate ganache for filling, wrapping and garnishing, strawberry and plain cocoa.
Ingredients are enough for a tray size 20
4 large eggs
1 tablespoon of Nescafe
120 ml water at room temperature
2 tablespoons plain cocoa
2 3/4 cups sponge cake mix sold in pastry supply stores
Mix all ingredients with a stand mixer on high speed for 8 minutes or until the mixture thickens well
And it becomes creamy.
Bake the mixture in a preheated oven at 180 degrees Celsius for 45 minutes or until done.
Chocolate ganache:
3 cups dark or milk chocolate
1 1/2 cups whipping cream or heavy cream
For decoration: plain cocoa, fresh strawberry
