Carb-Smart Noodles: Spaghetti Squash

  • 1 spaghetti squash
    Salt
    Olive oil
    1. Preheat oven to 400°.
    2. Cut squash in half the long way; lengthwise.
    3. Scoop out seeds and discard.
    4. Sprinkle flesh with salt and allow  to sit for 5 to 10 minutes to draw out moisture.  Dry flesh with paper towel.
    5. Rub flesh with olive oil.
    6. Bake flesh-side down on baking sheet for 40-45 minutes.
    7. Squash is done when it flakes into strands like spaghetti noodles. Tip: use a fork.
    1 cup spaghetti squash=31 calories/7 g carbs
    1 cup spaghetti noodles=230 calories/43 g carbs
    #vegetables
