Sometimes I think about upgrading it for her, but when I’ve brought up the idea, there are so many other things she’d rather spend a few grand on (again, a big trip, our next house, a car, etc.).
It all depends on how much money you have. If you already had the money for all those other things she wanted she might want the upgraded ring. If you were more poor she wouldn't have wanted the $1200 ring she might have done a $200 ring and use the rest on groceries.

It's a bad investment, you wouldn't get back the value you paid it for (you'll basically be ripped off by the jewelry, they're gonna make lots of money from an actually much cheaper piece they'll charge an insane premium for). If that's pre-requisite for love and commitment, I'd gladly pass that, for one it looks like gold-diggery, and second you'll literally be walking up and down the streets with something that did cost you a lot of money, isn't worth that much money, and you literally can get robbed or just lose it anywhere you go (e.g. car, roadside, parking lot, public restroom, garden etc etc etc).
