Annointing actually does have a purpose! (3 hedgies and they all do it lol) its a "protective" thing for them. New scent that they really like or associate with safety. To me, the most likely explanation for the bit about hedgehogs rubbing feces over themselves, is self-defense. Some predators might flat-out not bother trying to eat an animal that smells (and tastes) like poop, but in addition, a cut inflicted by hedgehog quills would likely be MUCH more costly if those quills were laced with bacteria. It's similar to how Komodo dragons eat carrion so much that they build up toxic saliva, and then they can hunt live prey just by biting it and waiting for it to die of the infection.

The licking is often a protective measure against other predators who would fight through the spikes but wind up with an infection from the bacteria. Hedgehogs also do this with toads they kill. They kill the toads and mix the venom in saliva and apply it to their bodies and spikes, essentially making themselves poisonous.

Right, but defense mechanisms are just those: defense. Animals don't set out to kill when defending territory, they are simply protecting themselves. An infection would take too long to get rid of a predator and is unnecessary, the hedgehog doesn't spread the foam on their quills and I'm pretty sure if scientists don't know why they do it, you probably couldn't figure it out in the span of one humorous video.
